A Viognier from Vallée du Rhône Combining Freshness and Aromatic Complexity
The Estate
Founded in 1808 in Tain-l'Hermitage in the Vallée du Rhône, the House M. Chapoutier became a family estate in 1897. Today run by Michel Chapoutier and his daughter Mathilde, this independent property has practiced biodynamics since the 1990s. A pioneer with its Braille labels, it owns vineyards in France, Portugal, Australia and Spain, establishing itself as a global reference for Rhône appellations.
The Vineyard
Produced under the Vins de France appellation, this Domaine des Granges de Mirabel "Coufis" is crafted from vineyards planted on basalt and clay soils.
Vinification and Aging
Hand-harvested, the grapes are dried for 30 to 50 days to concentrate sugars and aromas. Whole-cluster pressing, long fermentation with indigenous yeasts in demi-muids. Fermentation stops naturally at 120 g/L of residual sugar. Aged for 24 months on fine lees to refine the wine's texture and complexity.
