Appearance
This wine reveals a beautiful, luminous white hue.
Nose
The aromatic bouquet opens with elegant notes of white-fleshed fruits and subtle floral touches.
Palate
The attack is rich, full and fleshy, revealing a beautiful density of matter. The finish stretches with precision, carried by a mineral freshness with notes of lemon and gunflint.
Food and wine pairings
This wine pairs perfectly with shellfish, such as oysters or scallops, as well as with poultry in cream sauce.
Serving and cellaring
For an optimal tasting experience, it is recommended to serve this wine at a temperature between 12 and 14°C. Boasting a fine structure, it will evolve favourably in the cellar and can be enjoyed until around 2035.
The richness and tension of a Chassagne-Montrachet Premier Cru
The estate
Located in Puligny-Montrachet, in the heart of Burgundy, the Olivier Leflaive House was built up gradually throughout the 1980s. Now co-owned by Olivier and Patrick Leflaive, the estate stands out for its dual identity: a 26-hectare wine estate of its own and a precision négociant business. Certified High Environmental Value (HVE 3), the vineyard is cultivated with respect for the terroir. Technical management has been entrusted to Solène Panigai since 2024. Olivier Leflaive is also renowned for its comprehensive wine tourism offering.
The vineyard
The "Abbaye de Morgeot" climat is located in the village of Chassagne-Montrachet, below the road leading to Santenay. The vines, cultivated under the HVE 3 label, thrive at an altitude ranging from 230 to 250 metres. This foot-of-slope terroir rests on deep, clay-limestone soils, dotted with small concretions known as ooliths, which give the wine its structure and minerality.
The vintage
The 2021 growing year proved particularly demanding. The vegetative cycle began with severe frost episodes in early April, considerably reducing yields. The cool and rainy months of April and May slowed the vine's development and heightened disease pressure. Fortunately, a lull in June allowed for good flowering, followed by favourable weather conditions from mid-August onwards, leading to a manual harvest that began on 20 September.
Winemaking and ageing
For this Chassagne-Montrachet 1er Cru "Abbaye de Morgeot" Domaine 2021, the whole bunches are gently pressed before a 24-hour static settling. Alcoholic and malolactic fermentations take place entirely in oak barrels. Ageing lasts 18 months in total: first in barrels (including 10% new wood), then for the final six months in stainless steel tanks in order to harmonise the blend before bottling.
