Tasting notes

Colour
Displaying moderate intensity, the colour reveals a ruby hue enhanced by delicate violet nuances.

Nose
The aromatic bouquet opens with notes of red and black fruits, reminiscent of strawberry, raspberry and cherry. It is then enriched with floral touches of violet, complemented by subtle spicy and peppery nuances derived from its time in barrel.

Palate
Supported by lovely freshness and balanced acidity, the palate unfolds flavours of crisp red fruits. The ripe, elegant tannins integrate perfectly with a distinctive mineral backbone. The whole shines with finesse, leading to a persistent finish with fruity, mineral and finely spiced accents.

Food and wine pairing

This red wine pairs beautifully with flavourful meats such as roast veal in sauce, braised leg of lamb or feathered game like duck and pigeon. It also enhances dishes accompanied by brown sauces or mushrooms. As for cheese, it pairs ideally with pressed cooked cheeses like Comté, or washed-rind cheeses such as Reblochon and Tomme de Savoie.

The estate

The history of the estate began in 1945 when Raymond Javillier settled in Meursault, in Burgundy, on a two-hectare vineyard. His son, Patrick Javillier, took over in 1974, expanding the estate to more than 11 hectares. Today, the third generation runs the estate: Marion Javillier has managed the red wines since 2005, while Pierre-Emmanuel Lamy has overseen the white wines and the vineyard since 2011. The estate is distinguished by its sustainable viticulture and its commitment to letting each terroir express itself with authenticity.

The vineyard

This wine comes from a small 0.22-hectare plot located within the Pernand-Vergelesses appellation. The vines, around 35 years old, thrive at an altitude of between 250 and 300 metres, benefiting from south, east and north-east exposures. The terroir is characterised by clay-limestone soils dotted with residues rich in silica and flint, locally known as chaillots. The estate favours sustainable farming and entirely manual harvesting to preserve the quality of the fruit.

The vintage

2022 stood out for its record sunshine throughout the growing cycle, more than compensating for a few frost episodes in early April. Marked by high temperatures and a rainfall deficit, this season generated water stress favourable to berry concentration, yielding healthy grapes with optimal ripeness.

Winemaking and aging

For this Pernand-Vergelesses Village 2022, the grapes are entirely destemmed before fermentation in open vats using indigenous yeasts, with maceration lasting around twenty days. Aging then takes place over a total period of sixteen months. It begins in oak barrels, 30% of which are new, and finishes with a four-month refining period in stainless steel tanks to preserve all the freshness of the fruit.
