Colour
A pale yellow hue is revealed, enhanced by delicate silver or golden highlights.

Nose
Elegant and complex, the nose opens with a bouquet of white flowers and fresh citrus fruits such as lemon and grapefruit zest. Subtle notes of pear intertwine with more indulgent touches of vanilla, light honey, and toasted brioche.

Palate
From the very first sip, the wine shows lively precision, carried by a perfectly integrated natural acidity. The mid-palate reveals a full, round texture without any heaviness. The whole is elevated by a chiseled minerality that extends the wine toward a saline finish of remarkable persistence.

Food and Wine Pairing

This white wine pairs wonderfully with noble crustaceans such as lobster or langoustines, as well as with grilled white-fleshed fish or those served with a light sauce. It also enhances seafood risottos, roasted poultry, and soft-rind or aged goat cheeses.

Service and Storage

For an optimal tasting of the Pernand-Vergelesses 1er Cru "En Caradeux" 2023, it is recommended to serve it at a temperature between 12 and 14°C, with light aeration in a decanter while young. This wine can be enjoyed from 2025, but its structure allows it to evolve favorably and be kept for drinking until around 2032.

The Mineral and Elegant Expression of a White Burgundy Wine

The Estate

Founded in 1877 in the heart of Beaune, France, the house of Remoissenet Père et Fils is a historic figure of Burgundy. Taken over in 2005 by American financier Edward Milstein, its current majority owner, the estate stands out for its dual identity as a selective négociant and producer. The estate cultivates its own vines according to biodynamic principles. Renowned for its 14th-century cellars housing an invaluable collection of old vintages, the house favours a low-intervention approach to let the authenticity of each terroir express itself.

The Vineyard

The "En Caradeux" climat is located mid-slope in the commune of Pernand-Vergelesses, in the immediate vicinity of Aloxe-Corton. Facing east, toward the famous Corton hill, the vines benefit from a microclimate conducive to slow and harmonious ripening. The terroir rests on clay-limestone soils, composed of marl and siliceous limestone, which impart a distinctly mineral identity and remarkable freshness to the grapes.

The Vintage

The year 2023 began with a harsh winter, followed by a gradually evolving spring and a summer with moderate temperatures. These favourable weather conditions allowed for a slow, perfectly balanced ripening of the berries. This vintage stands out for its rarity, offering a harvest that combines generous yields with remarkable quality, while preserving elegant tension and vibrant natural acidity.

Winemaking and Aging

The grapes for the Pernand-Vergelesses 1er Cru "En Caradeux" 2023 are harvested by hand in small crates to preserve the berries. After gentle pressing, fermentation begins naturally through indigenous yeasts, followed by complete malolactic fermentation. The wine is then aged for eight to ten months in French oak barrels, 20 to 25% of which are new, medium-toast barrels. To preserve all of its aromatic complexity and texture, the wine is bottled without fining or filtration.
