The estate
Founded in 1840 and taken over in 2003, Maison Simonnet-Febvre has become an essential reference among fine Chablis wines, Crémants de Bourgogne and wines from the Yonne region. Simonnet-Febvre's wines are made with a constant regard for attaining excellence and are recognised for their precise and mineral style, that express the wide range of nuances of the Chablis terroirs.
The vineyard
This Simonnet-Febvre Chablis 1er cru "Mont de Milieu" 2019 is a Chablis wine made from vines that are 35 years old on average and are planted on Kimmeridgian soils.
Vinification and ageing
Following the harvest, vinification is carried out in stainless steel tanks. Fermentation takes place between 17 and 21°C. The wine is aged on fine lees for 12 months.

The tasting
As it evolves over time, this Chablis wine reveals a very rich aromatic palette. Aromas of candied fruits, vanilla and hazelnuts harmoniously blend with delicious notes of toast, butter and tobacco. A mineral, complex and seductive white wine.

Cellaring
