Tasting

Nose
The bouquet reveals seductive aromas of rose petals and ripe black cherry, enhanced by delicate touches of lavender and earthy notes.

Palate
The palate offers a generous texture and beautiful fruity complexity. Fine tannins support the whole with elegance, while precise acidity carries the wine towards a long, harmonious finish.

Food and wine pairing

This wine pairs wonderfully with rich poultry such as duck or goose, as well as feathered game. It also goes very well with offal, grilled meats, or mushroom-based dishes such as risotto. When it comes to cheese, a Camembert or a fresh Brie would be excellent choices.

Service and storage

To fully appreciate this Beaune 2023, it is recommended to serve it at a temperature between 13 and 15°C. This wine can be enjoyed after a few years in the cellar and will continue to evolve favourably until around 2033.

The authentic expression of a great Beaune wine by Maison Vincent Girardin

The estate

Founded in 1980 by a nineteen-year-old winemaker from a lineage present since the 17th century, Maison Vincent Girardin is an essential reference in Burgundy. Starting with just two hectares, the estate has grown thanks to a philosophy centred on respect for the terroir and minimal intervention. Since 2012, the property has been led by Jean-Pierre Nié, president of the Compagnie des Vins d'Autrefois. The historic technical team, led by Éric Germain, continues to uphold the values of excellence and authenticity that have earned the house its worldwide renown.

The vineyard

The plots dedicated to this Beaune flourish on clay-limestone soils, blending marl and limestone. Situated at altitudes ranging from 220 to 300 metres, these vines, aged between 35 and 40 years, are trained using the Guyot method. The estate favours environmentally friendly practices, excluding herbicides and encouraging deep ploughing as well as the use of natural compost.

The vintage

2023 offered a complex growing season, marked by periods of intense heat. These weather conditions favoured a significant accumulation of sugars in the berries, resulting in a generous harvest with high levels of ripeness and particularly low malic acid concentrations.

Winemaking and aging

The creation of this Beaune 2023 begins with hand-picked grapes followed by rigorous sorting. After light destemming and crushing, alcoholic and malolactic fermentation begin naturally thanks to indigenous yeasts in stainless steel tanks. The wine is then aged for 14 to 15 months in oak barrels, around 30% of which are new, in order to preserve the identity of the terroir. A light fining and minimal filtration precede bottling.
