A balanced Chablis Premier Cru with beautiful freshness
The estate
Domaine William Fèvre was established in 1959 when William Fèvre released his first vintage, although the family has been present in the region for more than 250 years. Starting with seven hectares, the estate gradually expanded to reach today around seventy hectares spread across 90 distinct parcels. Since January 2024, the property has belonged to Domaines Barons de Rothschild Lafite and remains under the technical direction of Didier Séguier, in the role since 1998. The estate stands out as the leading owner of Chablis Grands Crus, with fifteen hectares in this classification.
The vineyard
The Beauroy climat covers around sixty-four hectares on the left bank of the Serein, in the Poinchy-Chablis and Beine area. Domaine William Fèvre’s parcels, totaling around one hectare, are located in the lieu-dit Troësmes, considered one of the earliest terroirs to have produced Premiers Crus. These vines benefit from an optimal south and south-southeast exposure. The soil is based on Kimmeridgian limestone, an Upper Jurassic geological formation rich in marls and marly limestones containing marine fossils. The steep slopes encourage excellent drainage and maximum sunlight exposure—essential elements in the cool continental climate of Chablis. This historic terroir of Burgundy therefore offers ideal conditions.
The vintage
Winter 2021 was marked by an exceptionally severe frost episode that affected the entire French vineyard. A milder spring allowed flowering at the end of May, followed by particularly rainy months in June and July. Weather instability was observed from mid-July to mid-August, before late-August conditions enabled satisfactory ripening of the grapes.
Winemaking and aging
The Chablis 1er Cru "Beauroy" Domaine William Fèvre 2021 is vinified according to the estate’s traditional methods, favoring a pure expression of the terroir. Aging takes place on the lees with regular bâtonnage until mid-December, helping to develop aromatic complexity while preserving the hallmark freshness of the appellation.
