The aromatic bouquet is exuberant, revealing notes of citrus fruits and zest, along with subtle touches of white flowers, all underscored by a saline dimension typical of its terroir.
Palate
The palate offers a beautifully elegant body, vibrant and endowed with a finely chiselled mineral structure. The perfect balance between richness and tension leads to a refined, sophisticated finish.
Food and Wine Pairing
This wine pairs perfectly with seafood and shellfish, such as crab, lobster or a Breton lobster salad. Oysters also make an ideal pairing thanks to their saline resonance. It will also pair beautifully with white meats or poultry served with a creamy sauce.
Service and Storage
To fully appreciate all the nuances of this Grand Cru, it is recommended to serve it at a temperature of between 12 and 14°C. Built for cellaring, this wine will reveal its full complexity after several years in the cellar and can ideally be enjoyed until around 2034.
The Authentic Expression of a Great Chablis Terroir
The Estate
Founded in 1959, the William Fèvre estate is located at the heart of the Chablis appellation, in Burgundy. Initially comprising seven hectares, the vineyard now spans 70 hectares across 90 plots, making the estate the largest owner of Grands Crus in the region. A pioneer in environmental stewardship, the estate is committed to a full conversion to organic farming. Since January 2024, Domaines Barons de Rothschild Lafite has owned this historic estate, continuing a philosophy centred on the pure and authentic expression of the terroir.
The Vineyard
This wine comes from the climat Bougros, one of the seven Chablis Grands Crus. The plots, planted in the 1950s and 1960s, stretch across particularly steep slopes facing south and south-west. The terroir rests on Kimmeridgian geological soils, composed of limestone rich in marine fossils, marl and clay. These shallow, stony soils naturally limit yields, encouraging exceptional grape concentration, with the harvest carried out entirely by hand.
The Vintage
2023 began with a particularly mild and dry winter, followed by a humid April that led to significant disease pressure. The summer season was then marked by a long period of drought. Fortunately, warm temperatures in September allowed the berries to reach optimal ripeness ahead of an early harvest that began around September 10th, yielding a generous and high-quality crop.
Winemaking and Aging
After a rigorous sorting of the bunches and careful settling, vinification favours minimal intervention. Aging takes place over a period of fourteen to fifteen months. About half of this aging occurs in used French oak barrels, averaging six years of age, while the rest rests in other vessels, preserving minerality while adding subtle structural complexity.
