Wine Spectator

Bruce Sanderson

Plump and vibrant, this harmonious white is wrapped in toasty oak, with peach, apple, lemon and baking spice aromas and flavors. Cruises to a long, toasty, mineral-tinged aftertaste, propelled by vivid acidity. Best from 2026 through 2035. 848 cases made, 80 cases imported.

Decanter

Bichot owns a parcel of just over a hectare in the slightly reddish soils of Corton Languettes that produces this alluring Corton Charlemagne with aromas of ripe apricot, quince, and a hint of acacia flowers and spice. The texture is dense, almost chewy—Alain Serveau notes, 'It has almost the structure of a red.' In fact, the parcel was once planted to Pinot, but Serveau prefers Chardonnay, which they pick early (4 September in 2022) to preserve freshness.

James Suckling

Jim Gordon

A magnificent, full-bodied wine that shows power with finesse, full of ripe, luscious fruit and spices yet equally braced by fresh, vivid acidity. Grown on the south-facing side of the famous hill of Corton, it is rich in pears and crisp apples laced with subtle vanilla bean and cream nuances. From organically grown grapes. Tempting now, but best from 2030.

Jancis Robinson

Jancis Robinson

From Corton Languettes. They are looking for a tannic, full style and don’t want it to age too long. Fermented and aged (15 months) in oak (25% new). Certified organic (Ecocert). Cask sample. Rich and tense on the nose – good! Much nervier than most. Lots to chew on and nothing too sweet. (JR)

Description

Characteristics and tasting advice for the Corton-Charlemagne Grand Cru Domaine du Pavillon 2022 by Albert Bichot

Tasting

Nose
The aromatic bouquet reveals great complexity with buttery notes, cooked apple and citrus. Exotic fruit aromas such as pineapple delicately mingle with floral nuances of linden. A spicy dimension of cinnamon and mineral of flint completes this olfactory palette, enriched by vegetal touches of fern and juniper.

Palate
The palate seduces with its remarkable concentration, its distinction and perfect balance. The harmonious structure supports an intense and complex finish that lingers long, revealing all the nobility of this grand cru.

Food and wine pairings

This great white wine pairs perfectly with noble crustaceans such as lobster, langoustine or crab. It also elegantly accompanies fine fish, certain white meats and poultry in creamy sauce.

Service and aging

Serve between 12 and 14°C. With excellent aging potential, it can be kept until around 2029, or even beyond for lovers of mature wines.

The property

Founded in 1831 by Bernard Bichot in Monthélie, the Albert Bichot house moved to Beaune in 1912. Today led by Albéric Bichot, representing the 6th generation, it embodies innovation and sustainability in Burgundy. Owner of prestigious grand crus, Albert Bichot combines tradition and modernity, actively contributing to the recognition of the Climats of Burgundy as a UNESCO world heritage site.

The vineyard

The Grand Cru Domaine du Pavillon is a Corton-Charlemagne wine from the Languettes climate, located on the south/southeast slope of the Corton hill. This 1.2 hectare plot, formerly owned by the Ladies of the Abbey of Lieu-Dieu and nicknamed "Vigne Dieu", benefits from an exceptional terroir composed of brown limestone on argovian marl. The vines, averaging 35 years old, thrive on this terroir renowned for producing powerful white wines with remarkable finesse, delicacy and purity.

Vinification and aging

Manual harvest. Fermentation in oak barrels, 60% of which are new, for a period ranging from three weeks to two months. Aging from 12 to 15 months, in oak barrels of which 30% are new.

Grape variety

100% chardonnay.
