An exceptional Burgundy Monopole on the Hill of Corton
The estate
Founded in 1831 by Bernard Bichot in Monthélie, the House of Albert Bichot is one of the most renowned in Burgundy. Under the management of Albéric Bichot, it now farms more than 100 hectares, spread across six estates ranging from Chablis to Beaujolais, including 13 hectares of Grand Crus and 26 hectares of Premier Crus. A pioneer of organic viticulture in Burgundy, the house holds the region's largest portfolio of certified organic wines.
The vineyard
The Clos des Maréchaudes represents an exclusive Monopole of the Domaine du Pavillon, owned by Albert Bichot, and boasts a peculiarity that is extremely rare in Burgundy: this 2-hectare Clos hosts two appellation levels, Grand Cru and Premier Cru. The Corton Grand Cru plot covers 0.55 hectares at the foot of the hill, partly on a slope, and benefits from a particularly favorable East-Southeast exposure. The brown limestone soils rest on very clayey scree. The vines, averaging 40 to 50 years old, benefit from a privileged location, one of the sunniest Climats of the Corton hill, favoring early ripening. The name "Maréchaudes" originated in the 13th century under the designation "En Mareschaut", derived from the Old French "Maresche", meaning swamp, in reference to the once marshy area near the Lauve spring, which was drained through extensive drainage works.
Winemaking and aging
Harvesting is carried out by hand, followed by rigorous sorting of the grapes upon arrival at the winery. Maceration for the Corton Grand Cru "Clos des Maréchaudes" Domaine du Pavillon 2022 lasts 18 to 21 days in temperature-controlled wooden vats. Aging takes place over 16 to 18 months in oak barrels, 35 to 45% of which are new, allowing the wine to develop its complexity while preserving the expression of the terroir.
