Tasting

Appearance
The wine shows a deep red colour with garnet highlights, revealing a beautiful intensity of colour.

Nose
The nose is deep, blending red and black fruit aromas (cherry, blackcurrant, fig) with floral notes of violet, rose and peony. Delicate touches of oak and spice complete this bouquet, which tends to evolve over time towards more animal and forest-floor nuances.

Palate
The attack is full and round, supported by ripe tannins that give the wine a powerful structure while remaining subtle and elegant. The silky, almost velvety texture ends on a long, mouthwatering finish.

Food and Wine Pairing

This Pommard Village pairs beautifully with roasted or slow-cooked meats such as beef, duck and pork, as well as braised game, whose richness perfectly matches the wine's tannic structure and aromatic palette.

Serving and Cellaring

The Pommard Village "Clos des Ursulines" Monopole Dom. du Pavillon 2024 is ideally enjoyed at a temperature of 15 to 16°C. Its cellaring potential is estimated at 5-7 years and beyond, which means it can be kept until around 2029-2031.

The Estate

Founded in 1831 in Monthélie by Bernard Bichot, the House of Albert Bichot settled in Beaune in 1912 and today owns more than 100 hectares of vines in Burgundy, spread across six estates from Chablis to Beaujolais. Still family-run and independent, it has been led since 1996 by Albéric Bichot, a representative of the sixth generation. The house has begun the organic conversion of its estates in the Côte-d'Or and the Côte Chalonnaise, including Domaine du Pavillon in Pommard.

The Vineyard

The Clos des Ursulines lies to the south of the village of Pommard, towards Volnay, within a property entirely enclosed by a wall that also surrounds the cellar and the manor house of Domaine du Pavillon. This 3.76-hectare monopole rests on clay-limestone soils enriched with white marl, planted with vines aged 35 to 40 years and farmed organically. This location, close to Volnay, gives the terroir a distinctive expression, between the usual structure of Pommard and a more airy finesse.

Vinification and Ageing

The 2024 Pommard Village "Clos des Ursulines" Monopole Dom. du Pavillon is harvested by hand, with rigorous sorting of the grapes on their arrival at the winery. Fermentation takes place in temperature-controlled wooden vats for approximately three to four weeks, followed by 14 to 16 months of ageing in oak barrels, 20 to 30% of which are new.
