Tasting

Appearance
Displaying a lovely pale yellow hue reminiscent of light lemon, this wine is subtly illuminated by delicate greenish reflections.

Nose
The aromatic bouquet reveals itself with intensity, unveiling seductive notes of candied lemon harmoniously interwoven with fragrances of white flowers.

Palate
On the palate, the attack is lively, offering a straight and perfectly chiselled structure. The experience concludes with a long, mineral finish, elevated by elegant iodine and saline touches.

Food and wine pairings
Ideal as a companion for aperitif moments, this white wine also pairs wonderfully with a seafood platter, particularly enhancing oysters, prawns and crab.

Serving and cellaring
To fully appreciate this wine, it is recommended to serve it at a temperature between 9 and 11°C. It can be kept in the cellar and enjoyed until around 2030.

The estate
Founded in 1831, Maison Albert Bichot is an emblematic figure of Burgundy. Today led by Albéric Bichot, this independent family-run house shines through six prestigious estates, totalling more than 100 hectares of vines. Among them, Domaine Long-Depaquit, acquired in 1968, spans 52.1 hectares certified in organic farming and High Environmental Value. Renowned worldwide, this brand brilliantly combines a historic négociant activity with meticulous stewardship of its own land, establishing itself as a key player in sustainable viticulture.

The vineyard
The grapes come from an exceptional 28-hectare terroir located within the Chablis appellation. Averaging 38 years of age, the vines flourish across 34 plots with varied exposures and gentle slopes. The soil, typical of the region, is clay-limestone in nature and belongs to the Kimmeridgian geological era, imparting all its singularity and minerality to the vines.

Winemaking and aging
The process begins with alcoholic fermentation carried out in temperature-controlled stainless steel tanks. The wine then benefits from meticulous ageing on fine lees, still in stainless steel tanks, for a duration of 10 to 11 months in order to preserve all its purity and freshness.
