This cuvée pays tribute to the Pinot Noir from the superb terroirs of Urville. These parcels enjoy an excellent exposure and rest on calcareous soils giving a superb elegance and a very beautiful minerality.
The cuvée Brut Nature Sans Sulphur of the Champagne House Drappier is made only from the juices of the first presses, with mechanical presses at low pressure. In order to preserve the quality of the fruit and to limit pumping, the grapes and the juices are handled by gravity. Once the alcoholic fermentation has taken place, a complete malolactic fermentation takes place without any addition of sulphur or subsequent filtration. In order to preserve the freshness of the fruit, the wines are only aged in vats before bottling once the blends are completed. The Champagne Brut Sans Sulphur Drappier is then aged for 2 to 3 years on laths without the addition of any dosage liquor.
On tasting, the Brut Nature Sans Sulphur cuvée from the Drappier Champagne House seduces with its great aromatic freshness, developing citrus fruit notes, greedy pear notes and toasted hazelnut notes. On the palate, the mouth is full of tonicity and frankness. The minerality of the vintage fully expresses itself. A champagne that will delight purists, the Brut Nature Sans Soufre Zéro Dosage from the Maison Drappier will go perfectly with seafood dishes, Japanese cuisine or fresh goat's cheese.
