Tasting
Color
Pale gold color, traversed by a slow and regular effervescence that forms a slight foam cord on the surface. The whole gives an impression of delicacy and serenity.
Nose
Relatively discreet at the opening with notes of foliage and vetiver, the nose gradually evolves towards more floral and lactic aromas. Nuances of white fruits, fresh thyme and fresh hazelnut are revealed with aeration. The aromatic expression, spring-like and restrained, suggests a beautiful potential.
Palate
The attack is delicate, followed by a creamy and tender texture that pleasantly coats the palate. The effervescence is deliciously pleasing, accompanied by a beautiful quality acidity that induces a gentle salivation. The consistency is remarkable, both slender and airy, providing a silky sensation in the mouth. The finish, sweet and salivating, ends on a refreshing menthol bitterness with a beautiful persistence.

The property
Founded in 1764, the Champagne Cossy house is a family estate located in Jouy-les-Reims, a Premier Cru village of the Montagne de Reims. Sophie Cossy, at the head of the property since 2009, perpetuates the family heritage while infusing bold modernity. The vineyard extends over several villages, offering a diversity of terroirs. The grape varieties used include pinot noir, chardonnay and pinot meunier. The house stands out for its commitment to sustainability and its feminine approach, combining tradition and innovation to create unique cuvées.
The vineyard
The Pinot Noir de Pargny comes from specific plots located on the Premier Cru terroir of Pargny-les-Reims in the Montagne de Reims. The three plots - Les Viraux, Les Montilleux and Les Beaux-Regards - benefit from an exceptional Champagne terroir that gives the wine its characteristic minerality and aromatic finesse.
The vintage
The year 2020 in Champagne was marked by a mild winter followed by an early spring. The hot and dry summer favored optimal ripening of the grapes, while preserving a beautiful acidity thanks to the cool nights. These conditions allowed to obtain grapes of exceptional quality, combining aromatic concentration and freshness.
Vinification and aging
Fermentation and aging were carried out in 600-liter demi-muid, allowing a slow and subtle exchange with oxygen. This method gives the wine its silky texture and aromatic complexity while preserving the purity of the fruit and the expression of the terroir.
