Tasting Notes
Appearance
The colour shows a deep, satiny red-black hue, with subtle evolved nuances visible at the rim.
Nose
The aromatic bouquet is complex and seductive. It reveals ripe black fruit aromas such as blackcurrant and blackberry, intertwined with empyreumatic notes of smoke, graphite and tobacco. Touches of liquorice, truffle and damp gravel round out this palette.
Palate
The attack reveals a velvety texture and lovely richness, supported by a tannic structure that is both fine and firm. The acidity brings real vibrancy to the whole, leading into a lingering finish with mineral and spicy accents.
Food and Wine Pairing
This red wine pairs beautifully with roasted duck breast, feathered game such as pigeon or quail, and a mushroom fricassee. It also goes very well with pressed cooked cheeses such as aged Comté or Cantal.
Serving and Cellaring
For optimal tasting, this wine should be served at a temperature between 16 and 18°C. The 2005 vintage is ready to enjoy now, but has the structure to continue evolving in the cellar until around 2035.
The Elegance and Depth of a Grand Cru Classé from Pessac-Léognan
The Estate
Located south of Bordeaux, Domaine de Chevalier has agricultural origins dating back to the 16th century, though its true winemaking history began in 1865 under the impetus of the Ricard family. Recognised as a Grand Cru Classé de Graves in 1953, it has been run since 1983 by Anne and Olivier Bernard, the current owners. The estate spans around a hundred hectares, of which 70 hectares are devoted to vines. Surrounded by forest, this domaine stands out for its strong environmental commitment and its ability to produce quality red and white wines.
The Vineyard
The vineyard of the Pessac-Léognan appellation lies on poor soils made up of a clay-and-gravel base covered with black sand and white gravel. The red-wine vines, planted at a high density of 10,000 vines per hectare, benefit from a unique microclimate thanks to the vast surrounding forest, which regulates temperatures and encourages biodiversity. The estate follows an ecological philosophy based on observation, using plant-based infusions and cover crops sown between the rows to stimulate the vines' natural defences.
The Vintage
The year was marked by dry, sunny weather. After a cold winter, a rainy April encouraged growth, followed by a dry June ideal for flowering. The warm summer, punctuated by cool nights, allowed for rapid veraison and perfect vine health. With no weather-related constraints, each plot could be harvested at optimal ripeness, between late September and mid-October.
Winemaking and Ageing
The harvest was carried out plot by plot to respect the ripeness of each batch. Vinification is carried out separately for each terroir unit. The wine is then aged in oak barrels, allowing the wood to blend harmoniously with the wine's structure.
Grape Varieties
This blend is made up of 55% Cabernet Sauvignon, 35% Merlot, 6% Petit Verdot and 4% Cabernet Franc.
