The palate offers a silky texture and a harmonious structure. It reveals a beautiful balance between natural acidity, fruit and refined tannins drawn from old vines. The finish is direct, while retaining a lovely freshness.

Food and wine pairings
This red wine pairs wonderfully with light meats such as roast poultry or feathered game without a heavy sauce. It also accompanies fine charcuterie, lightly peppered cuts of beef, mushroom-based dishes and soft-ripened cheeses typical of Burgundy beautifully.

The estate
Founded in 1825 in Nuits-Saint-Georges, Domaine Faiveley is a historic figure of Burgundy. Today led by Erwan Faiveley, representing the seventh generation, the estate oversees a vast vineyard of around 120 to 127 hectares spread across the region's terroirs. Committed to a strong environmental approach, the estate has converted all of its land to organic farming, with official certification scheduled for 2025. Domaine Faiveley stands out for its constant pursuit of precision, revealing the authenticity of every plot.

The vineyard
The Climat "Champ Lalot" extends over 3.98 hectares within the Givry appellation, in the Côte Chalonnaise. This terroir enjoys a south-easterly exposure ideal for capturing the morning light. The vines, planted in 1975 and 1979, are between 45 and 50 years old. They thrive on silty soils, low in clay, which have the particularity of cracking during the summer heat. This agronomic feature encourages early ripening of the grapes and gives the wine a characteristic rusticity.

Winemaking and aging
To craft the Givry Village "Champ Lalot" 2023, the berries are harvested at optimal ripeness and then meticulously hand-sorted. The estate's philosophy favours gentle extractions in order to preserve the freshness and delicate aromas of the fruit. The wine then benefits from a measured aging in oak barrels, carefully selected to bring complexity without masking the natural expression of the terroir.
