Tasting
Colour
The colour reveals a pale, limpid golden hue, adorned with subtle green highlights in its youth.
Nose
The bouquet opens with great floral finesse, blending acacia, hawthorn and honeysuckle. It is then enriched with notes of white fruits such as peach and pear, underscored by a minerality reminiscent of gunflint.
Palate
The palate offers a lively, refreshing structure, carried by vibrant acidity. The whole reveals itself to be elegant, perfectly balanced and free of any heaviness, stretching into a long, persistent finish.
Food and wine pairing
This white wine pairs beautifully with noble fish such as turbot or sole, as well as with delicate shellfish served with a beurre blanc sauce. It also enhances white meats in sauce, seafood gratins and aged cheeses such as farmhouse goat cheese, Comté and Beaufort.
Service and storage
For an optimal tasting experience of the Montagny 1er Cru "Le Mont Laurent" 2024, it is recommended to serve it at a temperature between 10 and 12°C. This wine can be enjoyed now but also has the ageing potential to develop until around 2034.
The elegance and mineral freshness of a Montagny Premier Cru
The estate
Officially founded in 1997, Domaine Nicolas Rossignol is a key reference in Burgundy, France. Located in Beaune, the estate now spans between 17 and 20 hectares. Still led by its founder, Nicolas Rossignol, who serves as owner, winemaker and cellar master, the domaine stands out for its artisanal, minimal-intervention approach. Inspired by biodynamics, the winemaker vinifies each plot separately to express the quintessence of its terroirs, favouring elegance and aromatic purity in his wines.
The vineyard
Located in the northern part of the Montagny appellation, near Buxy in the Côte Chalonnaise, the "Le Mont Laurent" climat benefits from an ideal east and southeast-facing exposure. The vines flourish at an altitude ranging between 250 and 400 metres. This distinctive terroir rests on clay-limestone soils rich in Kimmeridgian marl, established on a Bajocian limestone base, giving the wine its characteristic mineral backbone.
The vintage
2024 was marked by particularly challenging climatic conditions in the Côte Chalonnaise, with pervasive humidity and record rainfall. However, plots benefiting from excellent drainage were able to make the most of these conditions. Selective water stress helped concentrate the aromas of the grapes, resulting in a harvest of remarkable freshness and brightness despite the weather challenges.
Winemaking and ageing
The grapes are hand-harvested in small crates to preserve the berries. Vinification of the Montagny 1er Cru "Le Mont Laurent" 2024 begins with natural fermentation in stainless steel tanks using indigenous yeasts. The wine is then transferred by gravity for ageing on fine lees for 12 to 24 months in barrels, with a proportion of new oak of 10 to 15%. Malolactic fermentation is deliberately delayed, and the wine is bottled without any fining or filtration.
