Tasting

Colour
With a deep ruby hue verging on garnet, this wine reveals a dark, brilliant and particularly concentrated colour.

Nose
The aromatic bouquet opens with intense notes of black fruits such as blackcurrant and blackberry. With aeration, subtle spicy touches of pepper, aniseed and liquorice emerge, complemented by a mineral, earthy undertone.

Palate
The attack reveals a dense texture supported by fine, elegant tannins. The mid-palate expresses flavours of black cherry and plum, perfectly balanced by a lovely minerality that stretches into a long, persistent finish.

Food and wine pairing

This red wine pairs perfectly with full-flavoured meats such as grilled rib of beef, beef bourguignon or roast lamb. It is also an excellent match for poultry in sauce, game and aged cheeses such as Époisses, Langres or a mature Comté.

Service and storage

For optimal enjoyment of the Pommard Village "Les Vignots" 2022, it is recommended to serve it at a temperature of 15 to 17°C, decanting it one to two hours beforehand. This wine can be enjoyed young or cellared until around 2034.

Other characteristics

This vintage stands out for its moderate acidity and average pH, offering fine natural balance. Bottled without fining or filtration, it may show a slight sediment.

The estate

Descended from a long line of winegrowers, Nicolas Rossignol founded his own estate in 1997 in Burgundy, France. After merging with the family estate in 2011, Domaine Nicolas Rossignol now spans around 16 hectares across some thirty appellations. As current owner and cellar master, Nicolas Rossignol crafts his wines in a modern winery built in Beaune in 2016. Renowned for his hands-off approach, he favours infusion over extraction to reveal the authentic expression of each terroir.

The vineyard

The Les Vignots plot, covering 0.9 hectares, rises to nearly 330 metres in altitude on the heights of the Pommard appellation. Facing due south on a steep slope, the vines, planted in 1965, thrive on poor, stony soils dominated by chalky white marl. This unique configuration naturally encourages low yields and a high concentration in the grapes.

The vintage

2022 was marked by warm, dry and particularly sunny weather. Abundant rainfall in June helped prevent water stress, allowing the berries to develop optimally. These climatic conditions produced grapes of exceptional quality, combining concentration, freshness and balance.

Winemaking and aging

The grapes for the Pommard Village "Les Vignots" 2022 are hand-harvested in small crates. After careful sorting, fermentation begins with indigenous yeasts, followed by a gentle maceration favouring infusion. The wine is then transferred by gravity into oak barrels for ageing on fine lees lasting 10 to 20 months. Malolactic fermentation is deliberately delayed until spring.
