Tasting
Colour
The colour reveals a deep ruby hue, enhanced by delicate garnet highlights.
Nose
The bouquet opens with aromas of fresh red fruits such as cherry, raspberry and redcurrant. With aeration, it reveals a beautiful complexity through notes of violet, fine spices and a subtle mineral touch.
Palate
The attack is fresh and elegant, carried by lovely natural acidity. The palate offers a silky texture along with ample, discreet tannins. The remarkably persistent finish lingers on flavours of cooked red fruits, spices and a chalky minerality.
Food and wine pairing
This red wine from France pairs wonderfully with white meats in sauce, poultry with cream and mushrooms, or feathered game. It also goes very well with slow-simmered red meats as well as matured cheeses such as brie or gruyère.
Service and storage
To fully appreciate this Savigny-Les-Beaune "Village" 2022, it is recommended to serve it at a temperature between 15 and 17°C, after decanting for fifteen to thirty minutes. This wine can be enjoyed young but will continue to evolve favourably, drinking well until around 2030.

The estate
Founded in 1997, Domaine Nicolas Rossignol is a key figure in Burgundy. Representing the fifth generation of winemakers in his family, Nicolas Rossignol is the current owner and manager of this 17-hectare estate, now headquartered in Beaune. Drawing on his international experience, he has instilled in the estate a philosophy centred on sustainable viticulture, inspired by biodynamics and respect for lunar cycles. Domaine Nicolas Rossignol stands out for its minimal-intervention approach, seeking to express the purest authenticity of its terroirs.
The vineyard
The terroir of Savigny-Les-Beaune lies on hillsides at altitudes ranging from 250 to 400 metres. This appellation benefits from a complex geological mosaic, combining limestone, white marl, red clay and stony scree. These unique conditions give the grapes optimal ripening while preserving great finesse.
The vintage
The year 2022 was marked by a particularly hot and dry summer, leading to an early harvest starting in August. The growing cycle unfolded very healthily, with no major pest pressure or weather disruption, benefiting from a saving rainfall that arrived at just the right moment for the vines.
Winemaking and aging
After a thorough double sorting, the grapes destined for the Savigny-Les-Beaune "Village" 2022 ferment thanks to indigenous yeasts. Extraction is carried out gently through punching down or pumping over. The wine is then aged on fine lees for ten to twenty months in oak barrels, with the proportion of new wood never exceeding half. Malolactic fermentation is deliberately delayed until spring. Finally, bottling is carried out without any fining or filtration.
