Colour
With an intense, deep ruby hue, the colour reveals subtle carmine and garnet nuances.

The aromatic bouquet opens with primary notes of fresh fruit such as black cherry, blueberry, blackcurrant and redcurrant. Delicate floral touches of violet and wild rose enrich this olfactory expression.

The palate offers a dynamic balance between fine tannic concentration, natural acidity and a particularly refined structure. Free from any harshness, the tasting experience stands out for its remarkable persistence and its complexity, which unfolds gradually.

The Authentic Expression of the Morey-Saint-Denis Terroir by Domaine Ponsot

The Estate

Founded in 1872 by William Ponsot, Domaine Ponsot is a historic institution located in the heart of Burgundy, France. Spanning eleven hectares, the estate is now run by Rose-Marie Ponsot, supported by winemaking expert Alexandre Abel. The estate stands out for its exceptional concentration of vines on the finest terroirs and for its minimalist philosophy. Certified in biodynamic farming since 2014, this family house continues an age-old expertise to reveal the very essence of its terroirs through wines of great purity.

The Vineyard

The Morey-Saint-Denis vineyard thrives on the Jurassic limestone slopes of the Côte de Nuits, at an altitude ranging between 220 and 366 metres. The vines, with an average age of fifty years, benefit from a high planting density that favours grape concentration. The soils, composed of limestone, marl and alluvial deposits, are tended with the greatest care, with the finest plots ploughed using horses to preserve the fragile structure of the soil.

The Vintage

The year began under the best auspices, with a very favourable flowering and fruit set, promising a generous harvest. However, a sudden and intense heatwave struck the vineyard just before harvest time. Faced with these climatic challenges, green harvesting was carried out twice to control yields and ensure optimal berry concentration.

Winemaking and Aging

The making of the Morey-Saint-Denis 2023 follows a philosophy of minimal intervention. After destemming, fermentation is triggered by indigenous yeasts and lasts around three weeks, punctuated by manual punching-down and pumping-over. The wine is then aged in barrels that have previously held several wines, around twenty years old, for a period of sixteen to twenty-four months. Malolactic fermentation takes place in barrel, with no racking during ageing, preserving contact with the fine lees.
