The estate

Drouhin Vaudon embodies the commitment of Maison Joseph Drouhin to the Chablis appellation since 1968. Founded in 1880 in Beaune by Joseph Drouhin, this family-owned Burgundy house is now led by the fourth generation, with Frédéric Drouhin as president. The Chablis estate, established around the Moulin de Vaudon—an 18th-century former watermill—covers thirty-eight hectares and is the largest Chablis estate fully converted to biodynamic viticulture. Under the direction of Philippe and Véronique Drouhin, the estate represents Burgundy excellence through terroir-respectful practices.

The vineyard

The Climat Mont de Milieu, located to the southeast of the Chablis Grands Crus hillside, enjoys a particularly favorable south and southeast exposure. The vines are planted on a slope sheltered from northerly winds, offering optimal sunshine from morning to evening. The soil is made up of Kimmeridgian limestone rich in marine fossils, combining calcareous clays and small white stones. This geological composition gives the wines a distinctive minerality and hallmark salinity. The estate follows rigorous biodynamic viticulture, with yields intentionally 20% below the limits permitted under the appellation.

The vintage

The 2021 vintage was marked by challenging weather conditions in Bourgogne, notably episodes of spring frost and unstable weather. These hazards resulted in the smallest harvest in the region’s recent history. Despite these challenges, the vintage’s whites stand out for their remarkable balance and delicate aromatics, with ripeness achieved and a structure tending toward softness and fleshy texture.

Vinification and aging

The Chablis Premier Cru "Mont de Milieu" 2021 is made from grapes harvested by hand into ventilated crates, followed by meticulous sorting. Slow pressing of whole clusters in a pneumatic press makes it possible to separate the last-press juices. After light settling, the juices ferment in stainless-steel tanks. Aging takes place exclusively in tank for eight to ten months, preserving freshness and the pure expression of the terroir, without the influence of oak.
