Tasting
Colour
The colour reveals a bright, concentrated red hue, with intense purple nuances.
Nose
The nose expresses great aromatic richness, blending scents of ripe black fruits such as blackcurrant and black cherry with delicate floral notes. Touches of spice, star anise and a lovely minerality complete this complex bouquet.
Palate
On the palate, this French red wine seduces with its vibrant, fruity profile, carried by silky tannins. Flavours of raspberry and morello cherry emerge, supported by lovely acidity and a mineral backbone, leading to a long, structured finish.
Food and wine pairing
This wine pairs wonderfully with flavourful meats such as roast capon, game like pigeon or venison, or grilled lamb chops. It also enhances earthy dishes, such as wild mushroom risotto, herb-braised pork or duck confit, as well as mature regional cheeses such as Époisses.
Service and storage
To fully appreciate this Gevrey-Chambertin 1er Cru "Aux Combottes" 2023, it is recommended to serve it at a temperature of 16 to 18°C, decanting it thirty minutes to an hour before tasting. Built to age, it can be cellared and will develop favourably until around 2035, or even beyond.

The estate
Founded in 1968 by Jacques Seysses, Domaine Dujac is a key reference in Burgundy. Initially covering just a few hectares, the estate now spans approximately 17.5 hectares of vines spread across prestigious terroirs. Currently led by Jeremy Seysses, supported by his family, the estate stands out for its minimal-intervention philosophy and environmentally friendly viticulture. Renowned worldwide for the authenticity of its cuvées, Domaine Dujac crafts wines that express with great purity the uniqueness of their original climats.
The vineyard
The terroir of Gevrey-Chambertin 1er Cru "Aux Combottes" enjoys an exceptional geographical position, entirely surrounded by plots classified as Grand Cru. The estate cultivates 1.16 hectares of vines here, planted between 1970 and 1989 on an east-facing slope. The soils, worked according to the principles of organic and biodynamic farming, feature a complex geology combining clay, gravel and a subsoil of crinoidal limestone and Comblanchien limestone. This diversity gives the grapes a unique identity, balancing minerality and structure.
The vintage
2023 was characterised by historically high temperatures in Burgundy, offset by favourable winter water reserves. Following early spring flowering, summer was marked by dry, hot weather. A heatwave at the end of August and beginning of September accelerated berry ripening, resulting in a generous and healthy harvest that required careful sorting to preserve the fruit's full freshness.
Winemaking and aging
The grapes are harvested by hand. The winemaking of the Gevrey-Chambertin 1er Cru "Aux Combottes" 2023 favours a gentle approach, using indigenous yeasts and a high proportion of whole clusters. After a fermentation period of around two weeks, punctuated by gentle punching down and pumping over, the wine is transferred by gravity. It is then aged in French oak barrels, a significant proportion of which are new, for fourteen to eighteen months to refine the tannins.
