Nose

The bouquet reveals subtle notes of fresh hazelnut, lime and bergamot. Mineral hints of flint and wood smoke enrich this complex aromatic palette.

Palate

Boasting an imposing structure, this wine offers a texture that is both fresh and creamy. The balance is masterfully achieved between the richness of the material and the mineral tension, leading to a particularly energetic finish.

Food and wine pairings

This white wine pairs wonderfully with seafood such as sole meunière, grilled sea bass with herbs or freshwater fish. It also enhances dishes in beurre blanc sauce, scallop risotto, as well as traditional cheeses, particularly aged goat cheeses or creamy cow's milk varieties.

Serving and cellaring

To fully appreciate this vintage, it is recommended to serve it at a temperature between 12 and 13°C. A light aeration of one hour before tasting is advised. This wine has fine ageing potential and can be cellared until around 2031.

The estate

Founded in 1840 by Jean-Alfred and Antoine Ferret, the J.-A. Ferret estate is a true institution at the heart of the Mâconnais, in Burgundy. A pioneer in plot-by-plot vinification, the property extends over approximately 17 hectares dedicated to Chardonnay. Since 2008, the estate has belonged to the renowned Louis Jadot House, which has carefully preserved the identity and historical values of this prestigious name. Under this stewardship, the estate continues to produce wines acclaimed for their remarkable mineral expression and exceptional quality.

The vineyard

The Clos des Prouges parcel covers just over 2 hectares in the centre of the village of Fuissé, an emblematic terroir of the Pouilly-Fuissé appellation. The vines benefit from a very gentle east-facing slope, thus avoiding the excessive afternoon heat. The terroir stands out for its shallow soils composed of highly calcareous marls from the Upper Bathonian. This vineyard is home to some of the estate's oldest vines, with a main section planted in 1956, complemented by vines dating from 1986 and a more recent plot introduced in 2003.

Winemaking and aging

The crafting of the Pouilly-Fuissé Village "Clos des Prouges" 2023 begins with manual harvesting. Fermentation and the first ageing take place in oak barrels for 10 months, with a proportion of 25% new barrels and 75% barrels that have held one to three previous wines. The wine then continues its maturation in stainless steel tanks on fine lees for an additional 8 months, bringing fine textural complexity. Bottling took place at the beginning of 2024. Malolactic fermentation was only partially carried out in order to preserve all the tension and freshness of the wine.
