Tasting
Appearance
This white wine displays a delicate pale lemon hue with subtle greenish highlights.
Nose
Particularly floral and fragrant, the bouquet reveals aromas of ripe stone fruits, dried apricot and almond tart. As it opens up, it takes on complex nuances of honey, honeysuckle and sweet spices.
Palate
This Puligny-Montrachet offers a superb balance between tension and finesse. The palate, medium to full-bodied, reveals remarkable freshness supported by a precise mineral framework and discreet tannins. The finish lingers at length for over thirty seconds.
Food and wine pairings
Ideal with seafood such as oysters, langoustines or mussels, this wine also enhances roasted brill in a shellfish jus with black garlic. It pairs perfectly with poached fish in a white sauce, refined white meats, as well as cheeses such as fresh goat's cheese, aged Comté or Cîteaux.
Serving and cellaring
For optimal tasting, it is recommended to serve this wine between 12 and 14°C, opening it thirty minutes in advance or decanting it. This Puligny-Montrachet 1er Cru "Folatières" 2023 can be cellared to be enjoyed until at least 2037.

The estate
Founded in 1859 by Jean-Edouard Dupard, a master cooper, the Jean Chartron estate is a historic figure of Burgundy. Today, the fifth generation, embodied by Jean-Michel Chartron and his sister Anne-Laure Chartron Malassagne, runs this prestigious estate. Spanning around 14.5 hectares, the vineyard is managed with an environmentally respectful philosophy, certified High Environmental Value and inspired by biodynamics. The estate stands out for its constant pursuit of the authentic expression of the terroir, elevating its cuvées among the essential benchmarks of the region.
The vineyard
The largest premier cru of the Puligny-Montrachet appellation, the Les Folatières climat enjoys an ideal position on the mid-slope with a south-east exposure. The vines, averaging around forty years of age, thrive on a shallow clay-limestone soil that gives the grapes a distinctive minerality. The vineyard is tended meticulously, following the lunar and astral cycles, and the harvest is carried out by hand.
The vintage
The year 2023 ranks among the warmest recorded in recent times, marked by a summer water deficit and strong disease pressure. Despite these climatic challenges, the harvest, which began on 26 August, delivered a generous yield. An extremely rigorous sorting made it possible to keep only the healthiest berries, ensuring optimal quality and preserving a lovely aromatic freshness.
Winemaking and aging
The grapes of this Puligny-Montrachet 1er Cru "Folatières" 2023 are pressed directly and gently using pneumatic equipment. After a static settling of twenty-four hours, the alcoholic and malolactic fermentations take place in oak barrels, 10 to 30% of which are new wood. The aging extends over eighteen months in total, beginning in barrels with light lees stirring, and ending with a six-month refinement in stainless steel tanks before minimal filtration.
