Tasting
Nose
The aromatic bouquet stands out for its delicate floral profile, accompanied by green notes reminiscent of fresh foliage. A touch of flint underlines the mineral identity of its terroir.
Palate
Remarkably pure, the palate is particularly taut and stretches out at length. Free of any heaviness, the wine ends on a floral finish enhanced by delicious hints of hazelnut and dried fruit.
Food and wine pairing
This great white wine pairs beautifully with seafood, such as white-fleshed fish or noble crustaceans like a finely prepared spiny lobster. It is also a superb match for white meats, whether roasted or served in a sauce, as well as for cheeses with a strong character.
Serving and cellaring
The Chablis Grand Cru "Les Preuses" Dom. Long-Depaquit 2023 is ideally served at a temperature between 11 and 13°C. While it can be enjoyed in its youth, it has excellent ageing potential and can be cellared until around 2033. Over time, it will develop a more intense minerality along with tertiary aromas of undergrowth and mushrooms.

The estate
Founded in 1831, Maison Albert Bichot is an emblematic figure in Burgundy. Now run by Albéric Bichot, representing the sixth generation, this family-owned house manages extensive vineyards of more than 100 hectares spread across six prestigious domaines. Renowned for its environmental commitment, the house stands out for its respectful approach to viticulture and a wide range of certified organic wines. Domaine Long-Depaquit, acquired in 1968, is the house's jewel in Chablis.
The vineyard
This cuvée comes from a 0.25-hectare micro-plot on the edge of the climat, very close to La Moutonne, within the Chablis appellation. The vines thrive on clay-rich Kimmeridgian soil covered with numerous stones. The high planting density of 8,500 vines per hectare encourages competition between the vines, promoting optimal concentration in the grapes. The name of this terroir is thought to derive from the word "perreuse", a reference to the ancient paved Roman road that once crossed the region.
Winemaking and ageing
Following an entirely manual harvest, the berries are gently pressed. The Chablis Grand Cru "Les Preuses" Dom. Long-Depaquit 2023 is fermented and aged entirely in oak barrels between one and five years old for ten months. The wine is then refined for a further six months in stainless steel tanks. The entire process takes place on fine lees to preserve freshness and add complexity.
