Tasting
Nose
The nose is delicate and inviting, driven by aromas of white-fleshed fruit, ripe pear and white peach. These fruity notes blend with a touch of fresh hazelnut, vanilla and a discreet, well-integrated woody backdrop, while a hint of crushed limestone adds a mineral dimension characteristic of the terroir.
Palate
The palate combines a heart of stone fruit with a round texture and a vibrant, zesty acidity that brings energy to the whole. The wine is taut and structured, with an impressively long finish marked by great finesse and a refined mineral close.
Food and Wine Pairing
This Mercurey 1er Cru pairs particularly well with white meats in cream and mushroom sauces, such as poultry in sauce or veal sweetbreads en cocotte. It is also a delightful companion to river or sea fish served in a delicate sauce, as well as certain soft or pressed cooked cheeses, such as Chaource or Comté.

A White Mercurey 1er Cru Balancing Richness and Minerality
The Estate
Domaine Adélie was created in 2005 in Mercurey, in the Côte Chalonnaise in Burgundy, when the House of Albert Bichot acquired a vineyard of more than 5 hectares. Its name pays tribute to Adélie, daughter of Albéric Bichot, who has run the family company since 1996. This micro-estate, now certified organic for both its viticulture and its wines, is devoted exclusively to the Mercurey appellation, in both red and white.
The Vineyard
The "Les Champs Michaux" vineyard is planted with Chardonnay on a Mercurey soil rich in clay, where broad bands of limestone rock outcrop. This combination gives the terroir the ability to produce wines that are both generous and taut. The vines are farmed according to organic principles, Ecocert-certified, in respect of the soil's natural balance.
The Vintage
The 2024 vintage follows a succession of years in Burgundy marked by challenges of heat and relative drought. In this context, the clay-limestone nature of the soil of "Les Champs Michaux" allowed natural water regulation, helping to preserve notable freshness and acidic tension in the finished wine.
Winemaking and Ageing
The Mercurey 1er Cru "Les Champs Michaux" 2024 follows the classic stages of Burgundian Chardonnay winemaking, with a measured oak ageing to preserve the expression of the fruit and the mineral dimension of the terroir. This winemaking complies with the specifications of the Ecocert "organic wine" certification, which notably regulates the use of oenological inputs.
