Billecart-Salmon reveals a balanced vintage champagne and a unique aromatic richness

The property

Since its creation in 1818 by the married couple, Elisabeth Salmon and Nicolas-François Billecart, the Billecart-Salmon Champagne House has remained independent, having preserved all of its know-how and demand for high-quality cuvées for 7 generations.

The vineyard

The Billecart-Salmon vineyard covers 100 hectares from Côte des Blancs to the Reims mountain. The vines are cultivated and cared for in a traditional manner so that the wine resembles real fruit and to reflect the quality of its terroir.

Winemaking and ageing

The Vintage 2007 by the Billecart-Salmon Champagne House is made from grapes which come from the beautiful terroirs of Grand and Premier crus, the Reims Mountain and Côte des Blancs. Its dosage is 4g/l.


The Vintage 2007 by Billecart-Salmon is made from a blend of Pinot Noir (75%) and Chardonnay (25%).



The wine is a beautiful golden yellow, with subtle golden tints. The effervescence is delicate and beautifully lively.


The nose mixes elegant fragrances of tree fruits, nuts and citrus with delicious notes of marzipan, fresh pineapple and greengage.


The precise and elegant palate mixes fruity aromas with notes of mandarin zest and citrus. The balanced palate seduces with its harmonious texture and persistent finish.

Food and wine pairings

The Vintage 2007 by Billecart-Salmon goes perfectly with demersal fish (fish from the bottom of the sea), shellfish, risottos and exceptional hams.
