Tasting notes
Appearance
The colour reveals a deep, luminous golden hue, enhanced by exceptionally fine bubbles rising with steady regularity.
Nose
Remarkably complex, the bouquet releases tertiary aromas of roasted coffee, toasted hazelnut and brioche. It then opens onto notes of dried fruits such as apricot and fig, underscored by a mineral touch and subtle nuances of mushroom, while retaining a lovely freshness of candied citrus.
Palate
Full-bodied and elegant, the palate seduces with its creamy texture and preserved liveliness. It unfolds rich roasted and mineral flavours, supported by a chalky tension that carries the wine towards an exceptionally long finish.
Food and wine pairing
This exceptional champagne beautifully enhances fine seafood, such as delicate caviar, fish tartare or a pan-seared turbot steak. It also pairs wonderfully with haute gastronomy dishes such as poultry with mushrooms or truffle-based preparations.
Serving and cellaring

The estate
Although its spiritual heritage dates back to the arrival of the monk Pierre Pérignon in Hautvillers in 1668, the contemporary Dom Pérignon brand was created within Moët & Chandon. Today, this prestigious Champagne House located in France belongs to the LVMH group and thrives under the stewardship of Moët Hennessy, its current owner. Led since 2019 by cellar master Vincent Chaperon, the estate continues its pursuit of the finest possible wine, producing exclusively vintage cuvées of absolute luxury.
The vineyard
The grapes come from an estate of approximately 1,200 to 1,250 hectares spread across the Montagne de Reims, the Côte des Blancs and the Vallée de la Marne. This exceptional Champagne terroir, resting on chalky soils under a semi-continental climate, gives rise to this cuvée. The plot selection is extremely rigorous, relying solely on seventeen Grands Crus and the historic Premier Cru of Hautvillers, cultivated through a sustainable viticulture approach.
The vintage
The year 1990 began with rapid vine growth, slowed by spring frosts in April. Flowering took place under cold and rainy conditions. Despite these climatic challenges, the summer allowed for excellent ripeness, giving rise to one of the greatest vintages of its decade.
Winemaking and ageing
Primary fermentation takes place exclusively in stainless steel tanks with yeasts selected by the house, followed by complete malolactic fermentation. The "P3" 1990 corresponds to the third plénitude of the wine: it benefited from an extended maturation on lees in bottle over several decades before a late disgorgement. This exceptionally long autolysis process, protected from oxidation, forges its unique aromatic complexity.
