Tasting Notes

Color
With a lovely pale gold hue, this wine reveals a fine, lively effervescence.

Nose
The bouquet opens with floral notes reminiscent of hawthorn, intertwined with hints of acacia honey and fresh almond. As it airs, delicate vanilla nuances emerge with great elegance.

Palate
Generous and full-bodied, the palate offers flavors of yellow stone fruit, dominated by mirabelle plum, along with delicate citrus notes. The wine lingers on a saline finish with impressive aromatic persistence.

Food and Wine Pairing
Ideal as an aperitif, this wine also pairs wonderfully with seafood and shellfish such as shrimp or lobster. It will perfectly complement poached fish or seafood dishes served with a beurre blanc sauce.

Service and Storage
To fully enjoy the Blanc de Blancs Extra-Brut 2019, it is recommended to serve it between 6 and 8°C as an aperitif, or between 9 and 11°C to accompany a meal. Stored in a cool, dark cellar, it will gain in richness and complexity, and can be enjoyed until around 2030.

The Pure Expression of Chardonnay by Champagne Philipponnat

The Estate
Although the family's winemaking history dates back to 1522, the house was officially founded in 1910 by Auguste and Pierre Philipponnat in Mareuil-sur-Aÿ. Now led by Charles Philipponnat, the estate stands out for its independence and its commitment to sustainable viticulture. Renowned for its long aging and low dosages, this prestigious house cultivates excellence across its Champagne terroirs, all while preserving a unique style that combines freshness, mineral precision, and intensity.

The Vineyard
The grapes come exclusively from the village of Mesnil-sur-Oger, an exceptional terroir. Classified as Grand Cru, this area is characterized by its chalky soils, which give the vines a distinctive minerality and great purity.

The Vintage
Considered an exceptional year, 2019 began with a contrasting winter, followed by an unstable April marked by both frost and rain showers. The coolness and humidity of May slowed the growing cycle before giving way to a hot summer. Two heatwaves in June and July caused slight water stress, but cool nights ahead of the harvest allowed for optimal ripening. The grapes were harvested under ideal weather conditions between September 11 and 21.

Winemaking and Aging
The making of the Blanc de Blancs Extra-Brut 2019 relies on meticulous pressing, using only the first press of the grapes. Traditional winemaking is carried out with great care to avoid any premature oxidation, and is accompanied by complete malolactic fermentation. Finally, the wine benefits from a long aging period of six years on lees, allowing it to develop its full complexity.
