The NV Brut Grand Cru Signature is an assemblage of 60% Pinot Noir and 40% Chardonnay, currently based on the 2007 vintage and 30% of reserve wines of 2006 and 2005. The wine was kept on the lees for 60 months for the second fermentation and was disgorged in October 2014. Rich, ripe and intense on the nose, this full-bodied, elegant and expressive terroir-driven champagne has a good length and is recommended by the domaine to be drunk in the next two years. However, I think it can age much longer. Total production: 40,000 bottles.

(60% pinot noir and 40% chardonnay; L12050): Light, bright gold. Yeasty, mineral-tinged aromas of fresh apple, strawberry and blood orange, with a smoky nuance gaining strength in the glass. Fleshy and expansive on the palate, offering ripe orchard fruit flavors and a hint of bracing citrus pith. Closes smooth and long, with a touch of toasted nuts and strong mineral bite. I like the interplay of richness and vivacity here.

Tasting

Appearance
A bright, luminous golden yellow hue, enlivened by remarkably fine and persistent bubbles, bearing witness to its long maturation.

Nose
The aromatic bouquet reveals indulgent scents of stewed pear and vineyard peach, subtly enhanced by hints of aniseed and roasted notes. Delicate touches of fresh bread and toasted nuts intertwine with an underlying mineral framework.

Palate
The effervescence is silky and creamy, delivering a luxurious texture that coats the palate. Aromas of yellow and red fruits balance perfectly with a chalky minerality marked by pronounced saline accents. The finish is remarkably long, combining freshness with complex hazelnut nuances.

Food and wine pairings
This wine pairs beautifully with seafood and shellfish (oysters, scallops, langoustines), whose iodine notes echo its natural salinity. It also accompanies bold cheeses such as Chaource, aged Comté or Mimolette with great elegance. For more daring pairings, it will elevate a mushroom risotto, a miso-glazed fish, or a fruity dessert such as a pear tart.

Serving and cellaring
To fully appreciate the complexity of the Signature Grand Cru, it is recommended to serve it chilled, at an ideal temperature between 8 and 10°C.

A Grand Cru champagne with saline elegance by Soutiran

The estate
Located in the heart of Champagne, Soutiran is a family-owned estate whose brand emerged in the 1950s, although the current structure was officially established in 1997. Today, the estate is led by Patrick Soutiran, alongside his children Fabrice and Estelle. This six-hectare vineyard stands out for its artisanal approach and confidential production. The house is renowned for its deep respect for tradition and its unique terroir, crafting high-quality wines that authentically express the full richness of their appellation.

The vineyard
The vines stretch across the south-facing slopes of the village of Ambonnay, classified as a Grand Cru within the Montagne de Reims in Champagne, with a few parcels extending towards Trépail. This singular terroir is characterised by chalky soils exceptionally rich in magnesium and a high proportion of siliceous clay, ensuring excellent drainage and good water retention. The estate practises sustainable viticulture inspired by the principles of High Environmental Value, encouraging grass cover and meticulous canopy management to preserve ecological balance.

The blend
This cuvée is built on a base from the 2020 harvest. To bring additional complexity and maintain the house's signature style, this blend is rounded out with 37% of carefully selected reserve wines from the 2013 to 2019 vintages.

Vinification and ageing
The crafting of the Signature Grand Cru stands out for its partial vinification in oak barrels, representing 11% of the blend, which adds texture without marking the wine. Malolactic fermentation is used selectively according to the characteristics of each year. The wine then benefits from extended ageing on lees for approximately three and a half years between bottling and disgorgement, fostering perfect integration and the development of complex tertiary aromas.
