Description
David Duband releases a complex and powerful Nuits-Saint-Georges wine
The estate
Founded in 1991, the David Duband estate, located in Chevannes in the heart of the Hautes-Côtes de Nuits, produces fine and elegant wines that stem from 23 prestigious Nuits-Saint-Georges appellations in Gevrey-Chambertin. The estate’s 17 hectares of vines are grown according to organic agriculture practices since 2006.
The vineyard
The Premier Cru "Les Procès" is a Nuits-Saint-Georges wine that stems from 30-year-old vines, facing south-east on limestone soils.
Winemaking and ageing
The grapes were harvested by hand, sorted and vinified at 80% of the entire harvest. During the 17 days of vatting, between 5 and 7 punchings of the cap were carried out, as well as pumping over. After pressing, the wines were settled for 2 weeks and put into barrels. 40% of the wine was aged in new barrels and 60% in barrels of 1 to 3 wines. After 14 months of ageing, the wines were racked into vats for about 3 months before bottling without filtration or fining.
