Located in Côte de Nuits, in Nuits-Saint-Georges, Domaine des Perdrix has been owned by the Devillard family since 1996. Produced from an exceptional terroir subject to rigorous management and vinification, the wines at Domain des Perdrix are among the greatest names in Burgundy wines.
Domaine des Perdrix is the only producer of this Premier Cru Aux Perdrix, recognised as one of the most beautiful terroirs in the Nuits-Saint-Georges appellation. The vineyard, planted between 1922 and 1980, cover an area of nearly 3.45 hectares on clay-limestone (predominantly clay) soils. Through its convex shape and southeast/east exposure on a gentle slope, this terroir benefits from good exposure.
Winemaking and ageing
Harvesting and manual sorting, followed by total destemming. Cold pre-fermentation maceration for 4 to 6 days. Alcoholic fermentation carried out with native yeasts. Post-fermentation maceration for 15 days, accompanied by punching down without pumping over, the number and intensity of which vary. Following maceration, the press wine and free-run wine are separated and aged separately. Ageing lasts for 18 months in traditional, Burgundian, 228-litre barrels (60% of which are new).

The wine is a deep, intense and velvety red colour.
The expressive nose mixes fragrances of fruits (red fruits, ripe black fruits) and spices with a touch of chocolate aroma.
The palate seduces with its balance, delicate tannins as well as its refreshing finish with notes of liquorice.
