Tasting

Colour
The colour reveals a beautiful pale gold hue enhanced by delicate green tints, a colour typical of young white wines from this region. The wine displays a lovely fluidity in the glass.

Nose
Wonderfully complex, the bouquet opens on aromas of stone fruit such as white peach and pear, mingled with citrus notes evoking lemon zest, orange oil and grapefruit. Strong mineral nuances of gunflint and wet stone express themselves fully. With aeration, subtle touches of toasted hazelnuts, white flowers and brioche emerge.

Palate
The attack is straight and linear, carried by a lovely vivacity. The mid-palate becomes more generous, revealing the flesh of stone fruit and citrus. The texture is chalky and mineral. The finish is long, saline and mouth-watering, leaving persistent notes of grapefruit and flint.

Food and wine pairing

This white wine from France pairs wonderfully with refined seafood, scallops or lobster. It also perfectly accompanies poached white fish with a beurre blanc sauce, roast poultry or aged cheeses such as Comté.

Service and storage

To fully appreciate this Saint-Aubin 1er cru "Clos de la Chatenière" 2022, it is recommended to serve it at a temperature between 11 and 13°C, after decanting for about thirty minutes. This wine, capable of long ageing, can be enjoyed from 2026 and will continue to evolve favourably until around 2034.

The estate

Founded in 1973 by Hubert Lamy, Domaine Hubert Lamy is located in the heart of Burgundy. Modest at first, the estate has since grown to reach eighteen and a half hectares today. Since 1995, Olivier Lamy has joined the family estate, before becoming its sole owner and director in 2022. Renowned for its innovative approach, notably through high-density planting and environmentally responsible viticulture, the estate is dedicated to producing wines that express the purest identity of their terroirs, with minimal intervention in the cellar.

The vineyard

This wine comes from a monopole plot of just over one hectare, located within the Saint-Aubin appellation. Planted in 1964, these old vines thrive on a very steep, south-facing slope. The terroir is characterised by shallow soils, rich in iron oxides, resting on a base of hard limestone. The vineyard is farmed organically, requiring rigorous manual work due to the steep incline of the slope.

The vintage

2022 was marked by complex weather conditions, with episodes of spring frost followed by high humidity favouring mildew, as well as hail. However, the plot's geographical position, with its altitude and excellent exposure, helped limit the damage and produce small berries, offering superb concentration of flavours.

Winemaking and aging

After manual harvesting and meticulous sorting, the grapes undergo crushing and gentle pneumatic pressing. The juice rests overnight before beginning fermentation with indigenous yeasts. The ageing of this Saint-Aubin 1er cru "Clos de la Chatenière" 2022 takes place on fine lees for around twenty-four months, mainly in large oak barrels aged between one and five years, with a very small proportion of new wood. The wine then spends a further six months in stainless steel tanks before bottling.
