Tasting notes
Colour
The colour reveals a pale yellow hue enhanced by delicate green highlights.
Nose
The bouquet opens with a pronounced minerality, evoking flint, intimately intertwined with citrus zest aromas. As it airs, gourmet pastry notes of nougat and toasted hazelnut emerge, lifted by a subtle spicy touch reminiscent of Sichuan pepper.
Palate
The attack offers a smooth texture that evolves into a lovely acidic tension, carried by remarkable energy drawn from the terroir. The palate unfolds flavours of green apple, passion fruit, lemon and grapefruit, complemented by a hint of lemongrass. The whole displays a perfect balance between fruit concentration and freshness, stretching into a long finish, all finesse and great mineral depth.
Food and wine pairing
This white wine pairs wonderfully with oysters or shellfish, whose salinity echoes its own minerality. It also perfectly accompanies delicate fish such as sole, roast poultry served with a cream and mushroom sauce, as well as vegetable-based dishes such as asparagus or artichoke. When it comes to cheese, it elevates a Camembert, a Brie or a fresh goat cheese.

The estate
Founded in 1973 by Hubert Lamy, Domaine Hubert Lamy is located in the village of Saint-Aubin, in the heart of the Côte de Beaune in Burgundy. Since 1996, the estate has been run by his son, Olivier Lamy, joined by his wife Karine in 2005. Spanning 18.5 hectares, the estate is renowned worldwide for its innovative approach, particularly its experiments with very high-density plantings. Favouring sustainable methods and a low-intervention winemaking approach, Olivier Lamy crafts vins de France of great precision that showcase the true identity of their terroirs.
The vineyard
The vineyard from which this Saint-Aubin wine originates covers an area of approximately 2.40 hectares. Facing east and southeast, the vines benefit from a cool microclimate, sheltered from the excessive heat of the afternoon. The vines, some of which were planted in 1935, 1960 and 1985, are rooted in shallow soils made up of clay and kimmeridgian limestone fragments. This particular geology forces the roots to draw their resources from deep within the earth, giving the wine its characteristic mineral signature.
The vintage
2022 stood out for its moderate climatic conditions. This mild weather encouraged optimal vegetative growth, allowing the grapes to reach lovely ripeness while retaining excellent natural acidity, conditions particularly conducive to the expression of this cool terroir.
Winemaking and ageing
Upon arrival at the winery, the grapes for this Saint-Aubin 1er Cru "Les Frionnes" 2022 are gently pressed using a pneumatic press. After an overnight settling period, fermentation begins spontaneously thanks to indigenous yeasts. The wine is then aged on the lees for approximately 18 months in old oak barrels, with a very small proportion of new wood, in order to preserve freshness and the expression of the terroir. Ageing concludes with a six-month maturation period in stainless steel tanks before bottling.
