Nose
Of great purity, the aromatic bouquet is built around a precise citrus register, blending lemon and grapefruit. Delicate notes of white flowers, reminiscent of hawthorn and acacia, enrich the whole without any oaky heaviness.

Palate
The attack is lively and energetic. The substance unfolds with finesse around a citrusy fruit, supported by a vertical mineral backbone that brings great uprightness. The finish stretches out at length, marked by beautiful tension and a refreshing touch of grapefruit.

Food and wine pairings
This great white wine pairs wonderfully with shellfish such as lobster or langoustines, as well as noble fish like turbot or sole served with a beurre blanc sauce. It also sublimates poultry in cream and mushroom sauce, or aged cooked-curd cheeses such as Comté.

Serving and cellaring
This Puligny-Montrachet 2024 is crafted for a fine evolution in the cellar. It is ideally recommended to enjoy it between 3 and 6 years after bottling.

The estate
Born from the division of the historic family estate, Domaine Jacques Carillon was officially established in 2010. Located in the heart of Burgundy, this prestigious name is today led by Jacques and Sylvia Carillon. They oversee a vineyard of around 5 hectares, mainly concentrated on the finest terroirs of the village. The estate is renowned for its artisanal and classical approach, producing white wines of great precision, dazzling minerality and outstanding aging potential, faithfully reflecting the identity of their appellation.

The vineyard
The plots dedicated to this cuvée cover an area of 2.71 hectares within the Puligny-Montrachet appellation. The vines, averaging 40 years of age, thrive on clay-limestone soils rich in fractured limestone and fine clay. Vineyard work is carried out with a respectful and sustainable approach, with rigorous control of yields to ensure the concentration and quality of the grapes.

The vintage
The 2024 vintage in Burgundy is characterised by weather conditions conducive to the making of lively and dynamic white wines. The growing cycle allowed optimal ripeness to be reached without any excess, thus preserving a magnificent natural freshness and an energetic acidity, earning this vintage the description of electric.

Winemaking and aging
The making of the Puligny-Montrachet 2024 is based on a philosophy of minimal intervention. Aging first takes place over one year in oak barrels, including 15% new oak, before continuing for six months in stainless steel tanks. A light filtration is carried out just before bottling, which occurs after a total of 18 months of aging.
