The estate
Established in Chablis since the 9th century, the Domaine Laroche embodies Burgundian excellence. Rich in this historical past, it has established itself as one of the major figures of the appellation. Since 2009, its know-how is carried by the Advini group, which perpetuates a philosophy based on the precision of winemaking, the elegance of style and the accuracy of expression of the Chablis climates.
The vineyard
The plot that gives rise to this Chablis Grand Cru "Les Bouguerots" extends over 31 ares, facing southwest and located on a limestone hill overlooking the Serein river. This climate, the most western of the Chablis grand crus, benefits from a particular soil: a clay layer of about 30 centimeters at the foot of the slope, which provides an essential water reserve during episodes of summer drought. Coming from a mass selection from the oldest vines of the estate, this vineyard gives birth to a wine produced in very small quantities.
Vinification and aging
The grapes, harvested by hand, are carefully sorted upon their arrival at the winery. After a gentle pressing in whole clusters, the must is left to rest for 12 hours in large vats to allow for natural clarification. Fermentation and aging take place in barrels from one to seven years old, over a period of about 9 months. The final blend is then refined by additional aging on fine lees for 6 months, enhancing the texture and complexity of the wine.
