Tasting

Colour
This wine reveals itself with brilliance, in a beautiful red hue.

Nose
The aromatic bouquet reveals a dominant note of black fruits such as black cherry, blackcurrant and dark berries, accompanied by wild strawberries. With aeration, notes of violet, exotic spices, black pepper and clove blend with a distinct chalky minerality, along with subtle hints of tea-smoked duck.

Palate
Medium to full-bodied, the palate offers a velvety texture and impressive tannic depth. The attack shows firm tannins that support a core of ripe, concentrated fruit. There is remarkable balance between mineral tension, the vivacity brought by fine acidity and the generosity of the fruit, leading to a dense, delicately chalky finish.

Food and Wine Pairing

This red wine from France pairs wonderfully with traditional dishes such as duck breast roasted with orange or cherries, roasted poultry, or game meats such as venison. It also pairs perfectly with mushroom-based dishes, such as truffle risotto, braised beef, as well as soft cheeses like Brie or Camembert.

Service and Storage

To fully appreciate this great wine, it is recommended to serve it at a temperature of between 15 and 17°C. With great aging potential, it can be cellared and enjoyed until around 2050.

Other Characteristics

This vintage marks the first year in which the entire production has benefited from official organic certification. The alcohol level is generally between 12.5% and 12.8%.

The Estate

Founded in 1967 by Jacques Seysses, Domaine Dujac is located in Morey-Saint-Denis, in the heart of Burgundy. From a modest initial size, the estate now spans around 17 hectares across prestigious appellations. Currently run by the Seysses family, led by Jeremy, Diana and Alec, the estate is distinguished by its philosophy of minimal intervention and its deep commitment to organic viticulture, certified since 2011. In just one generation, this family-owned estate has become a true international benchmark, recognized for the elegance and precision of its wines.

The Vineyard

The 0.73-hectare plot dedicated to this wine is located in the lower part of the "Les Beaux Monts" climat, in the commune of Vosne-Romanée. Facing east-southeast on a 10% slope, the vines, aged between 25 and 50 years, enjoy optimal sun exposure. The terroir consists of reddish-brown soil rich in light limestone fragments and clay, resting on a base of Premeaux limestone, giving the grapes a unique minerality and structure. The vineyard is entirely cultivated according to the principles of organic farming.

The Vintage

The year 2022 began with early budburst in early April, followed by a frost episode that had no impact on the growing cycle. Flowering took place around ten days early, at the end of May. While June was particularly rainy, favoring strong vine growth, summer proved to be exceptionally hot and dry. This summer drought slightly slowed ripening, but the cool nights in August helped preserve excellent acidity ahead of the harvest, which took place in early September.

Winemaking and Aging

This wine is the result of vinification carried out in the estate's new gravity-flow facility, thereby limiting mechanical handling. Fermentation took place in wooden vats with indigenous yeasts and the inclusion of 50% whole clusters. Extraction was carried out gently, with well-spaced punch-downs. Finally, the wine was aged for 17 months in oak barrels, 20% of which were new, to refine its texture without masking the brilliance of the fruit.
