Tasting notes

Appearance
The wine reveals a bright robe, displaying a lovely pale yellow hue leaning towards straw yellow, subtly enhanced by greenish reflections in its youth.

Nose
The aromatic bouquet stands out for its remarkable finesse. It unveils dominant notes of citrus and white-fleshed fruits, harmoniously intertwined with delicate touches of white flowers. The whole is underscored by a pronounced minerality, reminiscent of chalk, flint or oyster shell.

Palate
On the palate, this wine proves to be both vibrant, powerful and profoundly mineral. The attack is lively and straight, giving way to a supple, round and fruity mid-palate where the floral aromas fully express themselves. The long and persistent finish asserts a strongly marked terroir character with beautiful saline and iodised notes.

Food and wine pairings

This great white wine sublimates freshwater fish, such as pike-perch or pike prepared with beurre blanc. It also pairs perfectly with white meats served with cream and mushrooms, such as chicken with morels, or with delicate dishes such as sweetbreads.

Serving and cellaring

To fully enjoy all the nuances of the Chablis 1er Cru "Montmains" 2024, it is recommended to serve it chilled, at an ideal temperature between 10 and 12°C. Endowed with excellent ageing potential, this vintage can be enjoyed until around 2030.

The estate

Founded in 1840 by Jean Febvre, the Simonnet-Febvre House is a historic institution of Burgundy, deeply rooted in Chablis. Originally renowned for its sparkling wines, this emblematic brand has evolved while preserving its identity. Acquired in 2003, it now belongs to Maison Louis Latour, while retaining considerable independence. Currently led by Paul Espitalié, the estate combines the expertise of a négociant-éleveur with the cultivation of its own vineyards, offering a prestigious range that reflects all the richness and purity of the Chablis terroirs.

The vineyard

The Montmains climat is located on the left bank of the Serein, at the heart of the Chablis appellation. This premier cru terroir benefits from a beautiful south and south-east exposure, at an intermediate altitude between two higher slopes. The vines, with an average age of 35 years, thrive on soils typical of the Kimmeridgian Jurassic, rich in marl and limestone with marine fossils. This low-lying area, although sensitive to spring frosts, offers ideal conditions for a controlled yield, guaranteeing the concentration and typicity of the grapes.

Winemaking and ageing

The making of the Chablis 1er Cru "Montmains" 2024 emphasises the purity of the fruit and the expression of the terroir. Fermentation takes place exclusively in stainless steel tanks, with rigorous temperature control maintained between 17 and 21°C. The wine then benefits from careful ageing on fine lees for a period of 12 months, bringing roundness, richness and additional aromatic complexity without the influence of wood.

Grape variety

This cuvée is made exclusively from Chardonnay.
