The estate
Founded in 1959 by William Fèvre junior in Burgundy, the Domaine William Fèvre now spans 78 hectares across 90 parcels in the Chablis vineyard. Becoming the property of Domaines Barons de Rothschild Lafite in January 2024 and led by Didier Séguier, the estate holds the broadest range of Chablis Grands Crus with 15 hectares, representing 15% of the appellation. The first Chablis estate to be HVE3-certified in 2014, it has been practicing biodynamics on its Premiers and Grands Crus since 2010.
The vineyard
The Premier Cru Les Lys climat, a historic parcel of the estate once owned by royalty, covers 0.99 hectares on the left bank of the Serein, within the Vaillons climat. Facing east, the vineyard sits on a clay slope over Kimmeridgian subsoil composed of marls and mineral-rich clay-limestone, an emblematic terroir of Chablis.
The vintage
The 2022 vintage in Burgundy began with a mild, dry winter, followed by late budbreak at the end of March, which helped avoid frost risk. Flowering took place at the end of May under favorable conditions. Harvest began on August 31, revealing grapes in perfect health, with thick skins and generous pulp delivering excellent juice yields.
Winemaking and aging

For this Chablis Premier Cru Les Lys 2022, gravity flow is favored to avoid pumping. The grapes are pneumatically pressed over a short period of 1h30 to 2h00. Alcoholic and malolactic fermentations occur spontaneously in stainless-steel tanks. Aging lasts 18 months in total: 30% of the cuvée is aged for 5 to 6 months on fine lees in French oak barrels, before the entire wine completes its maturation in small stainless-steel tanks.
