The estate
Founded in 1959 by William Fèvre, Domaine William Fèvre stands as an essential benchmark for Chablis in Burgundy. Acquired in January 2024 by Domaines Barons de Rothschild Lafite, the estate spans 70 hectares across 90 parcels, including 15.2 hectares of Grands Crus, the largest holding in the appellation. Managed since 1998 by Didier Séguier, it was the first Chablis estate certified HVE in 2014 and has been farming its Premiers and Grands Crus according to biodynamic principles since 2010.
The vineyard
The Les Preuses climat covers 2.55 hectares, or 22% of the total area of this Chablis Grand Cru appellation. The terroir is characterized by dense, compact clay resting on a Kimmeridgian limestone slab, made up of marls and marly limestones. The parcels benefit from varied exposures: southwest for the northern parcels, and south and southeast for the others. The name of the climat most likely comes from the term "perreuse", in reference to the stones of an ancient Roman road.
The vintage
The year 2022 in Bourgogne began with a mild, dry winter, followed by late budbreak at the end of March. Despite a threat of frost, the number of clusters proved satisfactory. Flowering took place in excellent conditions at the end of May. Harvest began on August 31, making it possible to pick grapes in perfect health, with thick skins and a generous pulp offering a good juice yield.
Vinification and aging
Vinification of the Chablis Grand cru "Les Preuses" Domaine William Fèvre 2022 follows the principle of gravity flow, avoiding any pumping. Pneumatic pressing is carried out over 1h30 to 2h00. Fermentation takes place in stainless-steel tanks. Aging lasts 19 months in total: 35% of the cuvée is aged for 5 to 6 months on fine lees in French oak barrels, before aging is completed in small stainless-steel tanks.
