Tasting
Appearance
The robe reveals a particularly luminous pale gold, enhanced by deep yellow highlights. The effervescence is at once fine, regular and endowed with a beautiful persistence.
Nose
The bouquet opens with immediate freshness, releasing scents of white flowers that gently evolve towards nuances of honey and acacia. After aeration, more complex notes of cold ashes, smoke, Tahitian vanilla, blond tobacco and cedar wood emerge.
Palate
The attack offers a powerful and instantaneous presence, revealing a full and voluminous texture. The deeply chalky structure stretches the wine, giving it a remarkable length. The palate unfolds flavours of fleshy fruits, greengage and blood orange, complemented by touches of candied apricot and citron. The finish, smooth and iodised, surprises with its original accents of fresh tomatoes and nori seaweed.

The estate
Founded in 1981 in Reims, at the heart of Champagne, the Bruno Paillard House was born of the boldness of its eponymous creator. Today, the estate is led by Alice Paillard, who co-owns it with her father Bruno. This independent family brand relies on its own 34-hectare vineyard, covering 70% of its needs, including 12 hectares classified as Grand Cru. Renowned for its sustainable approach and the great purity of its wines, the house brilliantly combines respect for Champagne traditions with a resolutely modern vision.
The vineyard
The grapes for this cuvée come exclusively from prestigious terroirs classified as Grands and Premiers Crus, located on the famous Côte des Blancs in Champagne. These plots stand out for their deeply chalky soils, which give the wine its characteristic mineral tension.
The cuvée
This 2015 vintage stands out with a very low extra-brut dosage of 3 g/l. Moreover, this vintage is built around the theme of "Presence", an inspiration drawn from the work of the American artist Jeff Kowatch, known for his generous and radiant creations.
The vintage
The year 2015 began with a winter that was both wet and cool. The cycle continued with a long phase of near-drought stretching from the end of May to the beginning of August. The véraison period, in August, was marked by the return of rainfall, before giving way to a dry and refreshed climate at the beginning of September, offering ideal conditions to perfect the ripening of the berries. The harvest took place from 2 to 18 September 2015.
Winemaking and ageing
The making of the 2015 Blanc de Blancs relies exclusively on the use of juice from the first press. A proportion of 25% of the musts is vinified in small old oak barrels. The wine then benefits from an extended ageing of more than seven years on lees. After disgorgement, it enjoys a further rest of at least 24 months in the cellar before its release.
