Boasting a bright golden/straw color, the NV Champagne Cuvée 72 Extra Brut is the same base wine as the Première Cuvée but aged for an additional three years in the cellar following disgorgement, for a total of six years aging prior to release (or, as the name suggests, 72 months). The nose offers more complexity and depth by comparison, revealing aromas of orange marmalade, toasted hazelnut, croissant, honeycomb, and apricot. It fills the palate with a full-bodied richness, a pillowy mousse, and a delicate, savory flourish of salted praline on the finish and back palate. It delivers wonderful intensity and depth throughout and shows how this cuvée can certainly benefit from cellaring. Drink 2024-2032. Disgorged March 2020.

This cuvée perfectly embodies the Maison’s core philosophy, subtly echoed in the "Première Cuvée". 36 months of ageing on lees are followed by a further 36 months of patience after disgorgement. 36+36=72. A confident golden profile expressing blond-to-yellow fruit as delicious marmalade, frangipane, and highly floral honeyed notes. Citrus and spices are vivid and precisely crystallize the core of the nose. The palate is silky with a clear, axial tension; the finish unites saline nuances and rich, rounded bitters—ideal with well-prepared white meat.

The estate

Founded in Reims in 1981, Bruno Paillard is one of the youngest Champagne houses. With an uncompromising selection of terroirs, exclusive use of first press juices, blends created from an extensive collection of reserve wines, and an aging period twice as long as required by the appellation's specifications, the range of Bruno Paillard champagnes reflects a constant pursuit of excellence and a desire to create a "very personal style." Through elegant, complex champagnes of great purity, the Bruno Paillard House elevates Champagne savoir-faire to the pinnacle of its art.

The vineyard

The Bruno Paillard House oversees an exceptional vineyard patiently assembled, stretching across 32 hectares of vines spread over 15 crus, including 12 classified as "Grands Crus." The vineyard brings together the outstanding terroirs of Oger, Le Mesnil sur Oger, Cumières, Verzenay, as well as the exceptional Cru des Riceys located in the south of Champagne.

The wine

The Cuvée 72 by Bruno Paillard is crafted from a secret blend of more than 30 crus located on the finest terroirs of Champagne, half of which come from the estate's own vines. This cuvée is produced from a solera of reserve wines, a new harvest, and a selection of first press juices, part of which (20%) underwent the first fermentation in oak barrels.

The name of this Cuvée 72 refers to 36 months of aging on lees followed by an additional 36 months of maturation after disgorgement. The dosage is less than 6 g/liter.

Tasting

Appearance
Bright, the robe displays a beautiful straw gold color with yellow highlights. The effervescence is remarkably fine.

Nose
Broad and complex, the nose gradually reveals fragrances of citrus and white flowers (orange blossom, hawthorn, a touch of acacia…). As the wine evolves over time, the nose gains in complexity with notes of spices, saffron, or cedarwood.

Palate
Vivid and enveloping, the attack precedes a palate whose aromatics echo the fragrances found on the nose. Flavors of redcurrant jelly and dark fruits mingle with honeyed and dried fruit notes. The lovely creamy texture lingers through to a pure, broad, and persistent finish.
