Tasting
Appearance
The color shows a pale golden-yellow hue, characteristic of a champagne that has benefited from extended aging in the cellar. The effervescence appears as a fine, persistent mousse, with tiny bubbles rising delicately in the glass.
Nose
The nose reveals remarkable aromatic complexity, opening with buttery notes accompanied by fir honey. Hints of exotic fruit add a sophisticated dimension to the whole, reflecting the wine’s maturity and its evolution in bottle.
Palate
On the palate, this champagne unfolds with magnificent length and elegant complexity. Freshness remains vibrant despite the wine’s age, while the buttery and honeyed aromas found on the nose carry through harmoniously. The balance between natural acidity and subtle sweetness creates a sense of fullness, leading into a lingering, refined finish.

Serving and cellaring

The estate
Founded in June 2019 by Édouard Roy, Jérôme Queige and Camille Jullien Gilardi, EPC is reshaping the traditional Champagne model by placing transparency and collaboration with winegrowers at the heart of its approach. The House works with around 90 partner growers across Champagne, enabling them to retain control over their production while benefiting from high-performing marketing and sales support. For this cuvée, EPC partners with Franck Pascal, a biodynamics pioneer in the Marne Valley.
The vineyard
The grapes for Édition Limitée x Quentin DMR 2011 come exclusively from Franck Pascal’s estate in Baslieux-sous-Châtillon. This terroir is defined by clay-limestone soils with a strong marl component, delivering a distinctive mineral expression. The plots, farmed entirely biodynamically, are managed with respect to promote biodiversity and soil vitality. Natural grass cover between the rows and the complete absence of synthetic chemical products allow the vines to fully express the character of this exceptional Champagne terroir.
The vintage
The 2011 vintage benefited from weather conditions that allowed optimal grape ripening. After a minimum of ten years’ aging in the cellar, this vintage now reveals all its aromatic complexity and depth.
Vinification and aging
Édition Limitée x Quentin DMR 2011 was vinified using natural methods, favoring indigenous yeasts for fermentation. Malolactic fermentation occurred spontaneously, without temperature control. Aging on lees took place without bâtonnage, allowing for a gentle, gradual development of aromas. The wine rested for a minimum of ten years in the cellar before disgorgement.
