Tasting

Appearance
A beautiful golden yellow hue with remarkable brilliance.

Nose
The bouquet reveals itself as complex, offering fruity aromas of apricot, peach and lemon, subtly enhanced by minty touches.

Palate
The balance is perfect between fruit, freshness and a slight sweetness. The palate unfolds flavours of apple, flowers and honeysuckle, evolving towards indulgent notes of honey, crème brûlée and caramel, supported by a mineral hint of slate.

Food and wine pairings
This cuvée pairs ideally with iodised dishes. It will be perfect as an aperitif or to accompany seafood, oysters, sushi or fish tartare. It also enhances richer dishes such as sole meunière with beurre noisette. In line with the estate's recommendations, this wine should be reserved for savoury dishes and must not be served with dessert.

A fresh champagne of beautiful complexity

The estate
Winegrower and oenologist Nathalie Falmet runs the family estate located in Rouvres-les-Vignes, in the Côte des Bar. After taking over vineyards in 2000, she officially founded the estate under her own name in 2009. Her dual scientific and viticultural expertise allows her to oversee every stage with great precision. The 3.50-hectare vineyard has been HVE3 certified since 2021, underlining a strong environmental commitment. Through her brand, she stands out as a pioneer of the region, producing innovative cuvées.

The vineyard
The grapes come exclusively from the Le Val Cornet plot. This singular terroir is located on a limestone plateau in the south of Champagne, within the Aube. The vines flourish on Kimmeridgian clay-limestone soils, a geological specificity that directly influences the character of the grapes.

The blend
This cuvée is based on the principle of the perpetual reserve. The blend is built around the 2023 vintage and brings together a total of 16 different harvests, thereby creating remarkable complexity through the layering of years.

Winemaking and ageing
The creation of this cuvée relies on an innovative method consisting in blending successive vintages. Vinification is carried out entirely in temperature-controlled stainless steel tanks, preserving the freshness and purity of the juices throughout the creation process of this perpetual reserve.
