The Cuvée Royale Réserve "Non dosé" of the House of Philipponnat is made from Pinot Noir (40 to 50%) from Ay and Mareuil while the Chardonnay (30 to 55%) and Pinot Meunier (15 to 25%) come from the most beautiful terroirs of the Champagne region. 25 to 40% of the blend is made from reserve wines managed using the "solera" system, which allows the wine to gain in complexity without losing any of its freshness.
The vinification of Champagne Royale Réserve "Non Dosé" of the House of Philipponnat is carried out in vats and barrels for part of the wines. The Champagne is then aged on lees for 3 years in the shade and coolness of the cellars of the House of Philipponnat. Ageing continues with a 3-month rest after disgorging, the date of which is indicated on the back label.
On tasting, the Cuvée Royale Réserve "Non Dosé" of the House of Philipponnat reveals a pale gold colour highlighting the finesse of the persistent effervescence. The nose evolves on a palette of floral notes evoking lime blossom, hawthorn and vine flowers. It is on the palate that the wine reveals all its purity by drawing itself with precision. Lively and tense, the mouth offers beautiful acidulous citrus fruit notes, stretching out with persistence in a finish with toasted notes of warm bread and fresh apple. All in balance and purity, this Champagne without dosage will reveal aperitifs, seafood dishes and raw fish. To appreciate all the freshness and energy of this great Champagne, it is recommended to drink it 6 to 18 months following the date of disgorgement, at a temperature of 8°.
