Tasting

Appearance

The appearance reveals a deep, intense red color characteristic of the Pommard appellation, with garnet highlights.

Nose

Combining brightness and concentration, the nose reveals aromas of blackcurrant, blackberry and spices (black pepper).

Palate

On the palate, this wine impresses with its power and breadth, while retaining remarkable freshness. The tannic structure is imposing yet perfectly integrated, offering a velvety texture rather than aggressive astringency. The balance between concentration, acidity and tannins gives the wine a persistent length, with a finish marked by fruity and mineral notes.

Food and wine pairings

This Pommard Village 2015 is an ideal match for grilled or roasted red meats, notably beef and lamb prepared with aromatic herbs. It also pairs perfectly with feathered or furred game, richly flavored braised dishes, as well as aged hard cheeses like Comté or Burgundian washed-rind cheeses such as Époisses.

Serving and cellaring

This Pommard Village 2015 is best enjoyed at a temperature between 14 and 16°C. Given its tannic structure and concentration, this wine still needs time to fully reveal its potential and will evolve favorably for many years in the cellar.

A powerful, well-balanced Pommard from Maison Champy

The estate

Founded in 1720 by Edme Champy, a master cooper, Champy is Burgundy’s oldest wine merchant house. Based in Beaune, in the heart of the Côte de Beaune, it now farms around 22 hectares of vines across several prestigious appellations. Since 2016, the estate has belonged to the AdVini group, under the leadership of Thierry Bellicaud, while retaining its operational team led by Dimitri Bazas, vineyard manager and winemaker since 1999. The house stands out for its early commitment to organic viticulture, certified since 2010, and for its dual status as a wine merchant and estate owner. Its historic buildings, built in 1890 according to the principles of the Eiffel school and which hosted Louis Pasteur’s research on fermentation, are listed as historic monuments.

The vineyard

The Pommard vineyard extends over diversified soils characteristic of the Côte de Beaune. The plots lie on ancient alluvium at the bottom of the slope, well-drained clay-limestone soils mid-slope enriched with rocky debris, and Jurassic marls with brown calcareous soils at higher elevations. The vines benefit from southern and eastern exposures, at altitudes ranging from 250 to 330 meters, creating optimal conditions for Pinot Noir ripening. Vineyard management follows the principles of organic farming, excluding all synthetic products and favoring an environmentally respectful approach.

The vintage

The 2015 vintage is considered exceptional for the red wines of Bourgogne, particularly in Côte de Beaune. After a mild winter, the year was marked by significant climatic contrasts, with an icy spring followed by a prolonged heatwave from mid-May to mid-August, accompanied by remarkable sunshine and periods of drought. Timely rains at the end of August allowed for optimal grape ripening. These conditions produced wines combining concentration, power and freshness, with yields reduced by around 20 to 25%, enhancing aromatic intensity while preserving exceptional acidity.

Winemaking and aging

This Pommard Village 2015 was made using traditional Burgundian methods, including a cold pre-fermentation maceration, pump-overs and punch-downs during fermentation, and the use of indigenous yeasts. Aging took place in French oak barrels from the Allier and Tronçais forests, selected for their favorable tannic profiles, for a period of up to 16 months. This “haute couture” approach, as described by the house, favors limited production to maintain optimal concentration and complexity.
