Description
Characteristics and tasting tips for the Mâcon-Pierreclos "Tris de Chavigne" 2025 from Domaine Guffens-Heynen
Tasting
Appearance
In keeping with recent vintages, this cuvée typically displays a lemon-yellow hue with golden highlights, or a pale golden yellow with green tints in its youth.
Nose
The typical bouquet is complex and vibrant. It opens with aromas of flint, chalk and toasted almond, before moving towards notes of acacia honey, brioche and candied citrus. Subtle herbaceous and spicy touches, such as peppermint or star anise, often complete the picture.
Palate
On the palate, the attack is usually broad and fleshy, giving way to a straight, deep and very taut structure. Lively acidity and pronounced salinity support a silky texture that stretches into a long finish, both fruity and mineral, underscored by fine, mouth-watering bitter notes.
Food and wine pairings
This white wine pairs naturally with aged goat's cheeses, such as a Crottin de Chavignol, or moderately intense cooked pressed cheeses. It also makes a wonderful match for fine fish prepared simply, such as John Dory baked in a salt crust, or refined vegetarian cuisine showcasing roasted root vegetables.
Serving and cellaring
To reveal the full complexity of the Mâcon-Pierreclos "Tris de Chavigne" 2025, it is best served at around 12°C, after at least an hour of aeration or decanting. With its firm acidic and mineral backbone, this wine is built for long ageing in the cellar.
The richness and tension of an old-vine Chardonnay from the Mâconnais
The estate
Founded in 1979 in Pierreclos, Domaine Guffens-Heynen is now based in Sologny, in Burgundy. Run by its founders, Maine and Jean-Marie Guffens-Heynen, this artisanal estate of around 5.5 hectares has established itself as an essential benchmark. A pioneer in showcasing the terroirs of the Mâconnais, the estate stands out for its uncompromising standards, very low yields and flawless mastery of winemaking. Awarded three stars in the RVF guide, it produces white wines of remarkable precision and intensity, raising its cuvées to the level of the region's greatest crus.
The vineyard
This cuvée comes from the Chavigne plot, located within the Mâcon-Pierreclos appellation. Planted on very steep south-west-facing slopes, these old Chardonnay vines, some as old as 80 years, grow on ridge-top soils and limestone marl. The estate follows organic principles and favours the vines with the lowest yields. The steep gradient ensures ideal sun exposure and good ventilation, encouraging the natural concentration of the grapes while keeping them healthy.
Winemaking and ageing
The Mâcon-Pierreclos "Tris de Chavigne" 2025 is made from grapes harvested by hand in several successive passes, so that only berries at optimal ripeness and concentration are selected. The grapes are slowly pressed as whole bunches, with a rigorous selection of the first juices. Fermentation takes place in French oak barrels, around 25% of them new. Ageing continues on the lees with regular bâtonnage to build texture, before bottling with minimal filtration.
