Description

Characteristics and tasting tips for the Saint-Véran Village "C.C.P." 2025 from Domaine Guffens-Heynen

Tasting

Colour
The wine displays a luminous pale yellow hue, enhanced by delicate golden highlights.

Nose
The aromatic bouquet opens with notes of ripe yellow fruit, such as peach and apple, alongside pear and grilled lemon. Subtle hints of white flowers and a flinty minerality lift the whole.

Palate
Rich and concentrated, the palate offers a broad, powerful texture. It nonetheless retains a precise balance thanks to its mineral tension and refreshing acidity, stretching into a remarkably long finish.

Food and wine pairings

This white wine pairs beautifully with fine seafood such as langoustines, or delicate fish served with a beurre blanc sauce. It is also an excellent match for poultry in sauce and for aged hard cheeses such as Comté or Beaufort.

Serving and ageing

The Saint-Véran Village "C.C.P." 2025 reveals its full aromatic range when served at between 10 and 12°C. Built for ageing, it can be cellared and will develop gracefully until around 2035.

The richness and minerality of a white wine from Saint-Véran

The estate

Founded in 1979 by the Flemish-born couple Maine and Jean-Marie Guffens-Heynen, Domaine Guffens-Heynen is a benchmark in Burgundy. Located in the Mâconnais, with its administrative base in Sologny, the property covers just over 5 hectares. Still run today by Jean-Marie Guffens and his wife Maine, the estate is renowned for its uncompromising standards and very low yields. Often described as a master craftsman of Chardonnay, the winemaker has played a major role in the qualitative revival of his region, raising his cuvées to the level of Burgundy's most celebrated appellations.

The vineyard

This cuvée is a blend of two emblematic plots in the Saint-Véran appellation: "Combes" and "Clos de Poncetys". Planted on steep slopes between 200 and 350 metres above sea level, these vines grow on clay soils in the former, which bring flesh, and clay-limestone soils in the latter, which lend tension and minerality. The vineyard is farmed as naturally as possible, without any chemicals, and ploughed with a tracked tractor to preserve soil structure and biodiversity.

The vintage

2025 was marked by a spell of intense heat at the end of August. Despite these demanding weather conditions, the terroirs selected for this cuvée yielded berries at optimal ripeness, producing a remarkably rich juice while retaining lovely natural freshness.

Vinification and ageing

The grapes for the Saint-Véran Village "C.C.P." 2025 are harvested by hand over several passes, so that each bunch is picked at perfect ripeness. In the cellar, the berries undergo a very gentle vertical pressing. Fermentations begin spontaneously with indigenous yeasts. The wine is then aged for an extended period on its lees, without the addition of any cultured yeasts, before being bottled entirely unfiltered to preserve its full aromatic complexity and texture.
