Decanter

Fevre's Montée de Tonnerre comes from all three sectors. Seguier notes that Pied d'Aloup has the highest marl content, Montée de Tonnerre adds weight, and the old Chapelot vines (planted in 1936) add finesse. More closed on the nose. Weighty, concentrated, persistent. Saline notes. Will be a great gourmand wine. Some white-flower notes, lots of zesty orange and grapefruit on the palate with a nice touch of white peach. For long aging.

The 2021 Chablis Montée de Tonnerre 1er Cru has a succinct bouquet with low-key minerality that emerges with aeration. Very fresh with a light sea-spray element. The palate is well balanced with crisp acidity in a more elegant style, composed with brightness and sapidity on the finish. Excellent. Tasted blind at the Burgfest tasting.

The property

Established in 1959, the Domaine William Fèvre has become a benchmark for Chablis wines over the vintages. This illustrious Burgundy estate joined the Henriot group in 1998.

The William Fèvre Domaine oversees an exceptional 78-hectare vineyard, including 15.9 hectares classified as Premier Cru and 15.2 as Grand Cru. Certified HVE (High Environmental Value) since 2015, this vineyard magnifies, through its mosaic of more than 90 distinct plots, all the richness and diversity of the Chablis terroir.

The vineyard

This "Montée de Tonnerre" Domaine 2021 by William Fèvre is a Chablis Premier Cru wine from a 2.24-hectare vineyard. Facing southeast, south and west, the vines are planted on shallow, sparsely stony soils, mainly composed of white stones.

Vinification and ageing

Hand-harvested, the grapes are put into vats by gravity. A short pneumatic pressing is followed by a slight static settling. The alcoholic and malolactic fermentations are carried out for 40 to 50% of the musts in French oak barrels aged 6 years on average, as well as in small stainless steel vats for the rest of the harvest. The ageing of this Chablis 1er Cru lasts 13 to 14 months, including 5 to 6 months on fine lees, in the same containers as the fermentations.
