The Ayala Champagne House was founded in 1860 by Edmond de Ayala and his wife. For generations, the members of the Ayala family have been committed to producing greatly elegant champagnes that are appreciated beyond borders, notably across the Channel, where Ayala has been the official supplier for the British crown. In 2005, the Ayala Champagne House was taken over by the family company Bollinger.
Ayala’s Brut Nature comes from the best crus in Champagne and is the perfect expression of the house’s unique, authentic know-how.
Winemaking and ageing
Precise and wonderfully pure, this cuvée is subject to nearly 4 years of ageing on lees. This cuvée has no added sugar.
The wine is a lively golden colour, adorned with silvery tints.
The direct and delicate nose mixes fragrances of citrus fruit with tasty saline notes.
The complex and precise palate seduces with its purity, tension and chiseled mineral notes, as well as its aromas of grapefruit and white fruits.
Food and wine pairings
Ayala’s Brut Nature goes perfectly with savoury dishes (oysters, raw fish and shellfish, sea urchins, caviar) as well as Thai cuisine, sushi, makis and sashimi.
